Ingredients

  • Dressing :
  • 1/2 cup olive oil
  • 2 Tablespoons sherry vinegar
  • ( or 1 Tablespoon each white wine vinegar
  • and sherry )
  • 2 teaspoons grated ginger
  • ( or 1 teaspoon of ginger powder )
  • 1 teaspoon crumbled dried rosemary
  • 1/4 teaspoon each cayenne & sea salt
  • 2 large boneless skinless chicken breasts
  • 2 peaches
  • salad greens
  • Garnish : 1/4 cup grated feta cheese

Step 1

Whisk the dressing ingredients. Pour about one-third of the dressing into a small bowl or saucer : use a brush to coat both sides of the chicken breasts with the dressing. Season the chicken breasts with salt and pepper, and let stand for 15 minutes. Grill the chicken breasts for 15 minutes, turning once. Halve the peaches, and place cut-side down on the grill for about 5 minutes, until soft. Cut the grilled chicken diagonally into 1/4 inch slices. Cut each peach half into four slices. Toss the salad greens with the dressing. Top with the chicken and peach slices, and sprinkle with the feta cheese.
