Fusilli Carbonara with Endive and Lemon

Quinoa-Chia Energy Bars

- 2/3 cup white grape juice
- 1 tablespoon vanilla extract
- 1/4 cup chia seeds, divided
- 2 tablespoons coconut oil
- 1 1/2 cups quinoa flakes
- 1 cup unsalted pistachios, shells removed and coarsely chopped
- 1/2 cup raw walnuts, coarsely chopped
- 1/4 teaspoon sea salt
- 1 1/2 teaspoon cinnamon
- 1 1/2 cup dried figs (White Turkish variety is the best), chopped coarsely

- 1 small onion, diced
- 5 eggs
- 1/2 cup milk
- 1/2 teaspoon onion powder
- 1/8 teaspoon garlic powder
- salt and ground black pepper to taste
- 12 ounces shredded Cheddar cheese
