Sides - Balsamic Roasted New Potatoes

Stir together first 5 ingredients in a large bowl or large zip top plastic bag
- 2 tsp olive oil
- 2 tsp minced garlic
- 1 tsp chopped fresh tyme
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 lb small new potatoes, quartered
- 3 TBSP
- balsamic vinegar, divided
Orange Ginger Grilled chicken Thighs

Combine orange juice and next 5 ingredients in a shallow dish or large zip top freezer bag
- 1/3 cup orange juice
- 3 TBSP rice wine vinegar
- 3 TBSP lite soy sauce
- 1 TBSP minced garlic
- 1 TBSP minced fresh ginger
- 1 TBSP sesame oil
- 8 (4 oz) skinned and boned chicken thighs
Chesy Margherita Pizza

Roll dough into a 16 inch circle and place in pizza pan
- 1- 16 oz refrigerated fres pizza crust dough
- 2 plum tomoatoes cut into slices
- 6 oz. shredded part skim mozzarella cheese
- 2 oz grated fresh romano cheese
- 1/2 cup diced onions
- roasted red peppers
- Basil
- Oregano
- 1/2 cup tomato basil spaghetti sauce
Tex Mex Salisbury Steak

Combine first 7 ingredients and 1 tablespoon cilantor
- 1 lb ground round
- 1/2 pound hot or mild ground pork sausage
- 1 small onion, chopped
- 1 large egg
- 1/2 cup fine, dry bread crumbs
- 1/4 mild salsa
- 2 TBSP taco seasoning mix
- 2 TBSP chopped fresh cilatnro, divided
- 1 (2.64oz) package country style gravy mix
- 1 (14.5 oz) can reduced sodium beef broth
- 1 (10 oz) can diced tomatoes with green chiles, undrained
Chicken Tacos with pinneapplie Pico de Gallo

1. For pico, in a sall bowl, combine the pineapple, mango, cilantro, onion, lime juice and 1/4 tsp salt
- 1 cup chopped fresh pinneapple
- 1/2 cup chopped peeled mango
- 2 tablespoon minced fresh cilantro
- 1 tablespoon finely chopped red onion
- 1 tablespoon lime juice
- 3/4 teaspoon salt, divided
- 2 cups cubed cooked chicken breast
- 1/2 teaspoon ground cumin
- 1/4 teasppon salt free garlice seasoning blend
- 8 corn tortillas (6 inch size)
Baked Mostaccioli

1. Cook mostaccioli according to package irections
- 8 oz uncooked mostaccioli
- 1/2 lbs lean ground turkey
- 1 small onion, chopped
- 1 can- 14.5 oz- diced tomatoes, undrained
- 1 can 6 oz tomato paste
- 1/3 cup water
- 1 tsp dried oregano
- 1/3 tsp peppr
- 2 cups cottage cheese- fat free- 10 oz
- 1 teas dried marjoram
- 1 1/2 cups 6 oz shredded part skim mozzarella cheese
- 1/4 cup grated paresan cheese
Fresh Fruit Tartlets

In a small mixing bowl, beat the topping mix, milk and vanill on low speed until blended
- 1 envelope whipped topping mix
- 1/2 cup cold milk
- 1 tsp vanilla
- 1 8 oz package cream cheese, softened
- 1/2 cup confectioners sugar
- 10 indivdual graham cracker tart shells
- Assorted fresh fruit
Blackberry Cobbler

- 8 cups fresh blackberries
- 2 1/4 cups sugar
- 1/3 cup flour
- 1 tsp lemon juice
- 1/4 cup butter
- sugar & cinnamon
Strawberry Fudge Balls

Beat cream cheese at medium speed with an electric mixer until smooth,
- 1 (8 oz) cream cheese, softened
- 1 cup (6 oz) semisweet chocolate morsels, melted
- 3/4 cup vanilla wafers, crushed
- 1/4 cup strawberry preserves
- Coatings: 1 cup- finley chopped almonds, powdered sugar or unsweetned cocoa
Kung Pao Chicken

- 1 lb boneless skinless chicken breast cut into 3/4 in cube
- 2 TBSP minced ginger
- 1 TBSP minced garlic
- 2 1/2 tsps cornstarch
- 1 tsp soy sauce
- 1 tsp plus 1 TBSP Shao Hsing rice wine or dry sherry
- 2 tsp sugar
- 3/4 tsp salt
- 2 TBSP chicken broth
- 1 TBSP balsamic vinegar
- 1 tsp dark soy sauce
- 1 tsp sesame oil
- 2 TBSP peanut or vegetable oil
- 4 to 8 dried red chili peppers, snipped on one end
- 1 large red pepper, cut into 1 inch squares
- 1/4 cup unsalted roasted peanuts
- 1/4 cup minced scallions
