- 1 cup shortening
- 1 1/2 cup sugar
- 2 eggs
- 2 3/4 cups siften flour
- 2 tsp cream of tartar
- 1 tsp soda
- 1/2 tsp salt
Mongolian Beef

My family loves PF Changs Mongolian Beef and this receipe is right on the money! A real favorite
- 2 teaspoons vegetable oil
- 1/2 teaspoon ginger, minced
- 1 tablespoon garlic, chopped
- 1/2 cup soy sauce
- 1/2 cup water
- 3/4 cup dark brown sugar
- vegetable oil, for frying (about 1 cup)
- 1 lb flank steak
- 1/4 cup cornstarch
- 2 large green onions
Mississippi Mud Cake

Whisk together first 6 ingredients in a large bowl
- Cake:
- 1 cup butter melted
- 2 cups sugar
- 1/2 cup unsweeted cocoa
- 1/8 tsp salt
- 4 large eggs, slightly beaten
- 1 tsp vanilla
- 1 1/2 cups flour
- 1 1/2 cups chopped pecans, toasted
- 1-10.5 ounce bag miniature marshamllows
- Chocolate Frosting:
- 1- 16 ounce package powerdered sugar
- 1/2 cup milk
- 1/4 cup butter, softened
- 1/3 cup unsweetened cocoa
Mandarin Cashew Tossed Salad

This is a light, fun salad with fruit and nuts
- Dressing:
- 5 cups red leaf lettuce
- 3 cups Boston lettuce (or bibb)
- 5 cups iceberg lettuce
- 1 (11 oz) cans mandarin oranges
- 1/4 red onion
- 1 celery rib (diced)
- 3/4 cup chopped green pepper
- 1 cup honey roasted cashews
- 1/4 cup vegetable oil
- 1/4 cup honey
- 1/2 tsp ground mustard
- 1/2 tsp grated lime peel
- 1/4 tsp paprika
- 1/8 tsp salt
Vanilla Coconut Pears

Drain pears, reserving 1 1/4 cup liquid
- 3 (15 ox) cans chopped pears, undrained
- 2 TBSP cornstarch
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 1/3 cup sugar
- 2 TBSP bourbon
- 2 TBSP butter
- 1/3 cup flaked coconut, toasted
- 1/4 cup chopped pecans, toasted
Chicken Cacciatore

Dredge chicken breasts in the flour to coat well
- 1 lbs skinless, boneless chicken breasts, cut in half
- 1/3 to 1/2 cup flour
- 1 onion, chopped
- 1 green bell pepper, seeded/chopped
- 1/2 lb sliced mushrooms
- 1 teaspoon minced garlic
- 1- 28 oz chopped tomatoes and juice
- 1 cup white wine
- 1 cut chicke broth
- 1 teaspoon dried basil leaves
- 1 teaspoon dried oregano leaves
- 1 bay leaf
- salt and pepper to taste
Cheddar Ham Cups

In a bowl, combine the cheese, ham, mayonnaise, bacon and mustard
- 2 cups (8oz) finely shredded cheddar cheese
- 2 packages (2.5 oz each) thinly sliced deli ham, chopped
- 3/4 cup mayonnaise
- 1/3 cup real bacon bits
- 2 to 3 tsp Dijon mustard
- 1 tube (12 oz) large refrigerated flaky biscuits
Baked swiss chicken

Place chicken in a greased 13 cx 9 dish
- 6 boneless skinless chicken breast halves
- 1 can (10 3/4 oz) condensed cream of chicken soup, undiluted
- 1/2 cup chicken broth
- 6 slices swiss cheese
- 1 cup crushed seasoned croutons
Light Custard Berry Parfaits

In a small saucepan, combine the sugar, cornstarch and salt
- 1/4 cup sugar
- 4 teaspoons cornstarch
- 1/4 teaspoon salt
- 1 2/3 cups 1% milk
- 2 eg yolks, lightly beaten
- 3/4 teaspoon vanilla xtract
- 3 cups mixed berries
