Cinnamon Peach Cobbler

In a bowl, combine peaches, sugar, 1 TBDSP of biscuit mix and cinnamon
- 4 cups sliced peeled fresh or rozen unsweetened peaches, thawed
- 1/2 cup sugar
- 1 TBDSP plus 2/3 cup biscuit/baking mix, divided
- 1/2 tsp ground cinnamon
- 2 to 3 TBSP brown sugar
- 1/4 cup cold butter or margarine
- 3 TBSP milk
Red Velvet Cupcakes

Beat sugar and oil at medium speed with an electric mixer until blended
- 1 1/2 cups sugar
- 2 cups vegetable oil
- 2 large eggs
- 2 (1 oz) bottles red liquid food coloring
- 1 tsp white vinegar
- 2 1/2 cups all purpose flour
- 2 TBSP unsweetened cocoa
- 1 tsp baking soda
- 1 tsp salt
- 1 cup buttermilk
- 1 tsp vanilla extract
- Cream Cheese Frosting
- 1/2 cup butter, softened
- 1 (8oz) package cream cheese, softened
- 1 (1lp) package powdered sugar (4.5 cups)
- 1 tsp vanill
Melting MOments

Mix all well. Drop from a teaspoon onto a greased cookie sheet
- Icing:
- 2/3 c cornstarch
- 1/3 c powdered sugar
- 1 cup butter
- 1 cup flour

- 2 tsp lemon juice
- 2 tsp graed lemon rind
- 2 cups powdered sugar
Italian Meat Loaf with Fresh Basil and Provolone

1. Combine boiling water and tomoatoes in a bowl, let stand 30 minutes or unit soft
- 1 cup boiling water
- 1/2 cup sun dried tomatoes, packed w/o oil
- 1/2 cup ketchup
- 1 cup seasoned breadcrumbs
- 3/4 cup finely chopped onions
- 3/4 cup fresh basil
- 1/2 cup (2 oz) shredded provolone cheese
- 2 large egg whites
- 2 garlic cloves, minced
- 1 pound ground round
- cooking spray
- 1/3 cup ketchup or tomato sauce
Micorwave Chocolate Meringue Pie

Ok... as a dedicated baker, the idea of a "microwave" anything really bothered me
- 3 TBSP cocoa
- 1 1/2 cups of sugar
- 1/3 cup of flour
- 2 cups of milk
- 1/2 stick of butter
- 1 tsp vanilla
- 3 egg yolks
- 1/4 tsp of cream of tartar
Toscano Soup

Based on the favorite at Olive Garden, this has become a family staple at the Arnolds home
- 2 3/4 cups chicken broth
- 1/4 cup heavy cream
- 1 medium russet potato
- 2 cups chopped kale
- 1/2 pound spicy Italian sausage
- 1/4 tsp salt
- 1/4 tsp crushed red pepper flaks
Cherry Cordial Hot Chocolate

Served annually at Christmas functions at the Arnold home
- 5 1/2 cups milk
- 1 1/2 cups half and half
- 1 1/2 cups chocolate syrup
- 1/2 cup maraschino cherry juice
- 1 3/4 cups whipping cream
- 1 TSBP powdered sugar
- Chocolate shavings
- maraschino cherries with stems
Chocolate Drop Cookies

Bring all ingredients to a boil
- 2 cups sugar
- 2-4 TBSP cocoa
- 1 stick butter
- 1/2 cup milk
- 1/2 cup peanut butter (smooth)
- 1 tsp vanilla
- 3 cups of oats
Mystery Pecan Pie

Unfold and stack 2 piecrusts, gently roll or press together
- 1 15 oz package refrigerated piecrusts
- 1- 8 oz package cream cheese
- 4 large eggs
- 3/4 sugar, divided
- 2 tsps vanilla extract, divided
- 1/4 tsp salt
- 1 cup chopped pecans
- 1 cup light corn syrup
- 2 tablespoons butter, melted
Microwave Fudge

- 3 cups semi sweet or milk choc chips
- 1 can (14 oz) condensed milk
- 1/4 cup margarine
