Sauteed Green Beans and Onions with BAcon

- 2 cans green beans
- 4 turkey bacon strips
- 1- 16 oz cocktail onions, drained
- 2 teaspoons brown sugar
- 1/2 teaspoon dried thyme
- 3/4 teaspoon salt
- 1/2 teaspoon salt
Peanut Butter Fudge

lightly coat bottom of 9 x9 square pan with nonstick cooking spray
- 1/2 lb slice velveeta
- 1 cup (2 sticks) unsalted butter
- 1 cup creamy peanut butter
- 1 teawspoon vanilla extract
- 1 cup chopped nuts
- 2 boxes (16 oz) confectioners sugar
Ham & Scalloped Potatoes

Toss sliced potatoes in 1/2 teaspoon of cream of tartar & 1 cup of water
- 6-8 slices ham
- 8-10 medium potatoes (thinly sliced)
- 2 onions (peeled & thinly sliced)
- 1/2 teaspoon of cream of tartar, paprika, salt peper
- 1 cup gratted cheddar or American
- 1- 103/4 oz can cream of mushroom
Peanut Patties

In saucepan over medium-high heat, combine corn syrup, sugar, evaporated milk and peanuts
- 2 1/2 cup sugar
- 2/3 cup light corn syrup
- 1 cup evaporated milk
- 1 Tablespoon butter
- 3 cups raw peanuts
- 1 Tablespoon vanilla
- 1 dash red food coloring
Lasagna Soup

Brown meat and then add onion and garlic
- Cheesy Yum:
- 3/4 lb ground beef
- 3/4 lb sweet Italian sausage
- chopped onion to taste
- garlic to taste
- 2 teaspoons dried oregano
- 1/2 teaspoon crushed red pepper flakes
- 1 Tablespoons tomato paste
- 1- 28 oz can diced fire roasted tomatoes
- 2 bay leaves
- 3-4 cups chicken stock
- 8 oz mafalda or fusilli pasta. You can also use lasanga noodles broken into small pieces
- 1/2 c finely chopped fresh basil
- Salt and pepper to taste
- 8 oz ricotta
- 1/2 cup grated parmesan
- 1/4 tsp salt
- pinch of fresh ground pepper
- Topping:
- 2 cup shredded mozzarella
Slow cooked spaghetti sauce

In a skillet, cook beef and onion over medium heat until meat is no longer pink- drain
- 1 pound ground beef or italian sausage
- 1 medium onion, chopped
- 2 cans (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 can (6 oz) tomato paste
- 1 bay leaf
- 1 tablespoon brown sugar
- 4 garlic cloves, minced
- 1 to 2 teaspoons dried basil
- 1 to 2 teaspoons dried oregano
- 1 teaspoon salt
- 1/2 to 1 teaspoon dried thyme
Stuffed pinneapple

Cut pineapple in half lengthwise, leaving green tops attached- remove and discard core
- 1 fresh pineapple
- 3 orages, sectioned
- 1 banana, sliced
- 1 kiwi fruit, peeled and sliced
- 1/2 cup red grapes
- 1 star fruit, sliced
- 1/4 sugar
- 1 tablespoon lemon juice
- 1 tablespoon dark rum
- garnish: chopped, toasted macadamia nuts
Baked Oatmeal

- Ingredients:
- 2 Tbsp unsalted butter, melted and cooled slightly
- 2 cups old fashioned oats
- 1/3 cup walnuts, chopped
- 1/2 cup brown sugar, packed
- 1 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp salt
- 1 1/2 cups unsweetened vanilla almond milk
- 1/2 cup unsweetened apple sauce
- 1 large egg
- 2 tsp vanilla
- 1 Granny Smith apple; cored, peeled, & diced
- 1/2 cup raisins

1. Preheat oven to 400 2. Place chicken breats halves between 2 pieces of heavy duty plastic wrap
- 4- 60 oz skinless, boneless chicken breast
- 1/2 teaspoon salt
- 2 tablespoons extra spicy salt free seasoning (use Fajita seasoning as well)
- 1/3 cup cornmeal
- 1/2 cup non fat buttermilk
- 1 cup precrushed cornflake crumbs
- Olive oil flavored cooking spray
- 272 calories per serving
- 2.2 grams fat
