- 2 Tbsp apple cider vinegar
- 2 tsp Dijon mustard
- 2 tsp chives, fresh, chopped
- 1 tsp fresh tarragon, chopped or 1/4 teaspoon dried
- 1 tsp capers, drained and chopped
- 1 tsp olive oil
- 1 1/4 tsp black pepper, freshly ground
- 14 3/4 oz canned salmon, drained
- 1/4 cup(s) fat-free mayonnaise
- 1/4 cup(s) scallion(s), chopped
- 3 Tbsp dried bread crumbs
- 1/4 cup(s) dried bread crumbs
- 1 large egg white(s), lightly beaten
- 1 cup(s) mixed greens, salad
- 8 medium grape tomatoes, halved

combine the tomatoes, red onion, garlic, and basil in a medium bowl
- 1 1/2 cups chopped roma tomatoes 6-8
- 2 tbspns diced red onion
- 1 lg clove garlic, minced

Breakfast Tart-pancetta and green onion (quiche)

- Ingredients
- Butter, for greasing the pan
- Flour, for dusting the pan
- 1 unroll-and-bake refrigerated 9-inch pie crust (recommended: Pillsbury)
- 1 egg white, lightly beaten
- 2 teaspoons vegetable oil
- 3 ounces pancetta, cut into 1/4-inch pieces
- 5 eggs, at room temperature, lightly beaten
- 1/2 cup (4 ounces) mascarpone cheese, at room temperature
- 2 cups (8 ounces) shredded Gruyere
- 3 green onions, thinly sliced
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper

Cranberry-Apple Corn Bread Stuffing

Tried this 2008-2009. Good but open to a new stuffing for 2010
- 1/2 cup butter
- 3 med. celery stalks with leaves, chopped
- 1 cup chopped yellow onion
- 6 cups corn bread stuffing mix ( two 8 oz packages)
- 5 cups dry wheat bread cubes
- (Top has them by the bag)
- 2 cups chopped unpeeled granny smith apples
- 1 cup dried cranberries, cherries or raisins
- 2 tbspn snipped fresh sage leaves
- 1 tbpsn fresh thyme leaves
- 1/2 tspn salt
- 1/2 tspn pepper
- 3 1/4 cups chicken broth

- 2 lbs. ripe tomatoes
- 1 tspn salt
- 1/4 tspn pepper
- 3 tbspns red wine vinegar
- 6 tbspns extra-virgin olive oil
- 1/4 cup shredded fresh basil
- 2 tbspns fresh chopped parsley
- 1 med. red onion, coarsely chopped
- 1 lb. fusilli or similar
- 6 oz ricotta salata or feta cheese

In a large bowl, cream the butter, sugar, and vanilla and almond extracts
- 1 cup (2 sticks) butter, at room temperature
- 2/3 cup sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon pure almond extract
- 1 3/4 cups all-purpose flour
- 3/4 cup finely chopped pecans
- 1 (9-ounce) package chocolate candy kisses (recommended: Hershey's Kisses)
- 1 1/2 cups confectioners' sugar

- 1 1/3 cups flour
- 1 1/4 tpns baking soda
- 3/4 tspn cinnamon
- 1/4 tspn allspice
- 1/4 tspn salt
- 3/4 cup ( 1 1/2 sticks) unsalted butter
- 1 1/4 cups brown sugar
- 2 eggs
- 1 tspn vanilla
- 2 1/2 cups quick-cooking oats
- 1 cup pitted dates (optional)

- 4 med ripe peaches, peeled
- 2 tbspn sugar
- 2 tbspn lemon juice
- 3 tbspn balsamic vinegar
- 1/4 tspn salt
- 1/3 cup veg oil
- 6 cups mixed salad greens + arugula
- 1 small red onion, halved and thinkly sliced
- 1/2 cup thinly sliced cucumber
- 6 bacon strips cook and crumbled-optional
- 1/3 c chopped pecans, toasted
