Minestrone Soup

This is the best Minestrone soup period! Makes a huge batch, lasts all week long
- 2 tbspns olive oil
- 1 small red onion, finely chopped
- 2 med. cloves garlic, peeled and minced
- 2 stalks celery, finely chopped
- 3 med. carrots, peeled and coarsely chopped
- 4 cups low-sodium chicken broth
- 1 tspn each dried basil, oregano,and rosemary
- 1 -28 oz can crush tomatoe or pureed diced tomatoes
- 1 -15 oz can white beans, drained and rinsed
- 1 cup small penne pasta or tiny macaroni
- 1/4 lb sliced black foresh ham, finely diced
- 1/2 cup frozen peas, defrosted
- 1/4 cup finely chopped parsley
- fresh ground pepper to taste
- 1 About 1 tbspn grated Parmesasn cheese per serving.

Pasta dough homemade

Mum and I made this with the marinara sauce and meatballs
- 2 1/2 cups all-purpose flour
- 2 cups semolina flour
- 1 pinch salt
- 6 large eggs
- 2 tablespoons olive oil
- a few tablespoons water
Baked Chimichangas

Can use nonfat plain yogurt and Flat-out wraps to make it lowfat
- 1 can pinto beans, rinsed and drained
- 1 can 4 oz. sliced ripe olives, drained
- 1 can 7 oz. diced green chilies
- 1 cup prepared coleslaw mix with carrots
- 1 cup shredded sharp cheddar cheese (can substitute low-fat or less cheese)
- 1 3/4 c tomatoe salsa or salsa verde
- (or can used a tomato and a few green onions)
- 8 tortillas
- sour cream
- sliced green onions
- tspn garlic powder

350 degree oven Place potatoes on large piece of aluminum foil
- 12 small red potatoes
- 3 tablespoons olive oil

Thanksgiving 2013

21 people-Soheila was here us four, mum and lloyd, arezoo and eric, samira, riaz, farbod, baba, maman, mondana, jam
- four sat at the counter-buy another fold out table from costco
- ate at 5, arezoo working, they came at 3 to talk, karaoke after
- mum-made another 18 lb turkey, didn't need it. brought cranberries, apple stuffing, two veg gratins (only ate one) gravy, berry cheescakes (they loved em)
- made spinach artichoke stuffing-one batch
- sweet pots-big bag from costco-cooked 25 big ones-just do 20 next year-one lg. pecan-marshmallow batch-peel and boil in batches night before then mix in the mixer with the other ingredients and bake 45 mins. before serving
- mashed pots-big bag from costco- yukon gold, peel morning of, leave in water in pot in garage until ready to cook 2 hours before serving- mix in mixer with some cream cheese, s and P, 1/2 stick butter each batch and some cream or milk
- made two pumpkin pies-just make one
- turkey- can do 20 lb-fresh, buy on tuesday, clean night before and put in lg oven bag in fridge, make brine night prior, place in brine for 4 hours thanksgiving morning around 8 am. take out and bring to room temp one hour before baking.
- made banger pies-don't bother next year
