  • 3 (8 1/2-ounce) frozen quartered artichoke hearts,defrosted and diced or one lg jar from two jar pack in water from costco
  • 2 large eggs
  • 1 1/2 cups heavy cream
  • 2 cups chicken stock
  • 2 tablespoons lemon juice
  • 12 to 14 cups cubed (1-inch) day-old bread (1 loaf) used 8 cups from Top( and 2 cups mrs. cubbisons
  • 1 pound Brie,(costco) rind removed and cut into 1/2-inch cubes
  • 1/2 cup freshly grated Parmesan
  • 1/4 cup minced fresh parsley leaves, or dried

  • Pink Chile Mayonnaise:
  • 1 1/2 pounds halibut or cod (skinned, boned and cleaned) cut into 1-ounce strips

  • 1 tablespoons water
  • 1 1/2 cups panko bread crumbs

  • 1 bunch cilantro, leaves picked
  • 1 bunch chives, chopped (optional)
