- 1/2 cup solid vegetable shortening
- 1/2 cup butter softened
- 1 tspn clear vanilla extract
- 4 cups NOT BY WEIGHT,sifted confectioner's sugar ( approx. 1 lb/16OZ package)
- 2 tbspn milk
Chicken and rice Mulligatawny soup

nice for cold or rainy day, kids loved it
- 1/2 cup chopped onion
- 2 stalks celery,
- chopped 1 carrot, diced
- 1/4 cup butter
- 1 1/2 tablespoons all-purpose flour
- 2 1/2 teaspoons curry powder
- 4 cups chicken broth
- 1/2 apple, cored and chopped
- 1 cup white or brown rice -use leftover already cooked rice
- 3-4 skinless, boneless chicken breast tenders, thin cut - cut into cubes
- salt to taste ground
- black pepper to taste
- 1 pinch dried thyme
- 1/2 cup heavy cream, heated
- add some kale and diced red bell peppers also

- 3 same size bowls
- 2-3 oz cold water
- 4 eggs
- equal portions milk to eggs so less or more depending. this is for 24
- equal portion of flour
- salt/pepper
- vegetable oil or shortening
Xmas Roast Beef

Mash all ingredients to make a paste Massage over the roast Preheat oven to 350 degrees
- 4 pound Sirloin Tip roast or boneless ribeye (for 4 people +2 kids)
- or can use Morton's Steaks from Costco
- 5 cloves crushed garlic
- 1/4 cup horseradish sauce
- 2 sprigs rosemary or 2 tspn dried
- 4 sprigs thyme or 2 tspn dried
- 1/4 cup kosher salt
- 1/4 cup pepper
- 1/2 cup EVOO
Coleslaw-Savoy, lime and Cilantro

- 4 scallions
- 1/2 bunch fresh cilantro, torn
- 1/2 cup sour cream
- 1/2 cup mayonnaise-to taste
- 1 1/2 tablespoons sugar
- 2 limes
- Kosher salt and freshly ground pepper

- Salad:
- 1/2 cup olive oil
- 1/4 cup mayonnaise
- 1/4 cup grated Parmesan (pre-grated in a pack from the store)
- 1/4 cup minced fresh parsley
- 1 tablespoon sugar
- 1 tablespoon vinegar
- 2 teaspoons black pepper
- 1 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 1 clove garlic, pressed
- Juice of 1 lemon
- 1 head romaine lettuce, roughly chopped
- 1/2 head iceberg lettuce, chunked
- 6 whole pepperoncini
- 1/2 cup whole black olives
- 1/2 cup whole red cherry tomatoes
- 1/2 small red onion, very thinly sliced into circles
- 1/3 cup grated Parmesan
salmon, white bean and citrus salad

White Bean, Citrus and Salmon Salad Great use of leftover cooked/grilled salmon
- 15 oz canned white beans, drained and rinsed
- 16 oz canned salmon, pink, flaked with a fork, bones removed
- 1 small red onion(s), diced
- 1 bunch(es) arugula, stems removed, chopped
- 1/4 cup(s) parsley, fresh, chopped
- 1 tsp lemon zest
- 1 tsp thyme, fresh, chopped (from front yard)
- 3 Tbsp fresh lemon juice
- 1 Tbsp olive oil
- 1/2 tsp table salt
- 1/2 tsp black pepper, freshly ground

- 1 tablespoon boiling water
- 1/4 cup sliced almonds
- 2 tablespoons olive oil
- 1 small onion, chopped

- 1 lb crabmeat (I used canned)
- 1/2 cup grated pepper jack
- 1/2 cup cream cheese
- 3/4 cup mayo
- 1/4 cup grated parmesan
- 1/4 cup green onions, minced
- 2 cloves garlic, minced
- 2 tbspns worcester sauce
- 2 tbspns lemon/lime juice
- 1 tspn hot pepper sauce
- 1/2 tspn dry mustard

Lemon fusili with arugula

Mum made this. So lemony and fresh! Would be great with grilled salmon or chicken
- 1 tablespoon good olive oil
- 1 tablespoon minced garlic (2 cloves)
- 2 cups heavy cream
- 3 lemons
- Kosher salt and freshly ground black pepper
- 1 bunch broccoli
- 1 pound dried fusilli pasta
- 1/2 pound baby arugula (or 2 bunches of common arugula, leaves cut in thirds)
- 1/2 cup freshly grated Parmesan
- 1 pint grape or cherry tomatoes, halved
