Preheat oven to 325°F Position rack in the center
- 4 oz slivered almonds
- 2¼ cups all purpose flour
- 1½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup granulated sugar
- ¾ cup brown sugar
- 3 large eggs (room temperature)
- ½ cup olive oil
- 1 tablespoon pure almond extract
- ½ teaspoon pure vanilla extract
- 1 teaspoon lemon zest
Spicy creamy Udon Soup

Cook the udon noodles according to packaging's instructions
- frozen or dried udon noodles enough for 4
- 1 1/2 cup shiitake mushrooms sliced (optional) can use any extra veg.
- 4 cloves garlic minced
- 1 small onion sliced
- 1 tbsp red pepper paste gochujang
- 1 tbsp low-sodium soy sauce
- 1/2 tbsp sesame oil
- 1 1/2 cup dashi broth
- 1/2 cup cooking cream 35%
- 2 tbsp unsalted butter
- 1 tbsp all-purpose flour
- 1/2 tsp white pepper
- green onions for topping
- add steamed kimchi or other dumplings at the end
Cheese & Chutney Baguette (pret a manger)

- 2 slices of your favorite bread (sourdough or country white works well)
- 2-3 oz soft goat cheese (chèvre)
- 2 Tbsp red pepper jelly (or to taste)
- 1 Tbsp butter or mayonnaise for the outside of the bread
Banh Mi sandwiches

Vietnamese sandwich can make with pork or chicken
- ½ cup rice vinegar
- ¼ cup white sugar
- ¼ cup water
- ¼ cup matchstick-cut carrots
- ¼ cup thinly sliced white onion
- 1 skinless boneless chicken breast half

Butter a 9x13-inch baking dish; arrange slices of bread on the bottom
- 1 (1 pound) loaf French bread, cut diagonally in 1 inch slices
- 8 large eggs
- 2 1/2 cups milk
- 2 teaspoons vanilla extract
- 2 teaspoon ground cinnamon
- ¾ cup butter
- 2 tspns ground cardamom
- 1 1/3 cups brown sugar
- 3 tablespoons light corn syrup or agave
Korean cold cucumbers in a jar

Cut the cucumber lengthwise in half and cut diagonally into thin slices
- 1 English cucumber (or 2 to 3 kirby cucumbers), washed
- ¼ cup thinly sliced onion
- 1 green onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons soy sauce
- 2 teaspoons Korean hot pepper flakes (gochugaru)
- 2 teaspoons sesame oil
- 2 teaspoons toasted sesame seeds

- 1 1/2 cup dashi broth or chicken broth
- 1/2 cup whipping cream 35%
- 2 tbsp unsalted butter
- green onion for garnish

- 1/2 tsp pepper
Wild rice salad with grapes (cabin) and walnuts

Use the purple grapes from the cabin harvested in September
- 1 cup of dry wild rice
- 1 veggie bouillon cube
- 1 cup of seedless red grapes –
- 1 large celery stalk – sliced thinly – about 1/2 cup
- 2 ounces feta cheese –optional diced
- 1/3 cup of walnut pieces-used candied from produce section
- 1/4 cup minced red onion
- 2 tbs minced parsley
- Dressing
- 3 tbs olive oil
- 1 tbs red or white wine vinegar
- 1 minced garlic clove
- 8 twists of black pepper from a pepper mill
- A pinch of salt
