Nordstrom Citrus Couscous Salad

Combine all salad ingredients in a large bowl
- Salad:
- 2.5 oz arugula
- 1/3 cup chopped red onion
- 5 oz dried cherries
- 1 - 29 oz can of mandarin oranges
- 8.8 oz box Israeli couscous, cooked according to package directions, cooled, and lightly salted
- 1.5 lbs of diced and cooked chicken seasoned with salt, pepper, and lemon to taste (omit chicken for a vegan version)
- Dressing:
- 1/4 cup white vinegar
- 1/2 cup extra virgin olive oil
- 1/3 cup of orange juice or 3-4 freshly juiced oranges
- 3 tbsp lemon juice
- a pinch of garlic powder, pinch of black pepper
Creamy Strawberry Feta Pasta Salad

Summer Picnic side dish
- 2/3 cup (160g) Greek yogurt
- 1/4 cup (60ml) apple cider vinegar
- 1/4 cup (60ml) extra virgin olive oil
- 1/4 cup (80g) honey
- 1/2 teaspoon salt
- 1/2 teaspoon ground dry mustard (or 1 teaspoon dijon mustard)
- 1 Tablespoon poppy seeds
- Pasta Salad
- 1 pound dry pasta (elbow, bow tie, rotini, etc)
- 5 cups chopped romaine lettuce
- 1 lb - 1.5 lbs strawberries, sliced (I use 1.5 lbs for lots of strawberries!)
- 2 avocados, diced
- 3/4 cup crumbled feta cheese
- 3/4 cup (85g) slivered or sliced almonds

- 3 tbspns chopped fresh cilantro
- 1 tbspn grated onion
- 1/4 tspn chili powder
- 1/4 tspn salt

- 2 1/2 cups cooked cubed chicken
- 6 slices rye bread lightly toasted
- green leaf lettuce
- 1 lg. tomatoe

- 24 oz fresh cranberries (2 packages)
- 1-1/2 cups water
- 1 cup sugar
- 1 cinnamon stick or dried cinnamon
- CUSTARD LAYER
- 1 1/3 cups sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 4 1/2 cups 2% milk
- 9 egg yolks
- 1 tablespoon vanilla extract
- 1 tablespoon butter
- CAKE
- 2 loaf (16 oz) frozen pound cake, cut into 1″ cubes
- OR
- 1 9 x13 white cake , baked, cooled and cubed
- Whipped cream for decorating
