Use the Pie-maker. cook the filling ahead of time and add to egg last minute
- 2 tspns butter
- 1/2 cup chopped red onion
- 1 cup chopped mushrooms
- 1/4 cup finely chopped basil
- tablespoon dried parsley
- s & P
- 1/2 tspn red pepper flakes
- 4 eggs lightly beaten
- 2 or 3 small zucchini chopped small
- ready made pie crust or can use puff pastry but edges not as pretty

Halve this recipe for just the 4 of us or just kids, they will only eat one slice
- To serve:
- 6 extra-large eggs
- 1 1/2 cups half-and-half or milk
- 1 teaspoon grated orange zest
- 1/2 teaspoon pure vanilla extract
- 1 tablespoon good honey
- 1/2 teaspoon kosher salt
- 1 large loaf challah or brioche bread

Prawn Curry

The Oxo curry buillons are the best but hard to find
- 3 zuchinni-cubed
- 1/2 lg. sweet onion
- 1/2 can crushed tomatoes
- 1 roma tomatoe diced
- salt and pepper to taste
- 1 1/2 lb. large prawns
- 2 curry buillion cubes or a few tspns curry powder
- 1 cup water
Persimmon, Pomegranate, and Spinach Slad with maple Citrus Vinaigrette

- For the Salad
- 4-5 ounces baby spinach
- 1-2 Fuyu persimmons, sliced
- 1/2 cup pomegranate seeds (about 1/2 a large pomegranate)
- 1/3 cup toasted pecans, roughly chopped
- 1/3 cup thinly sliced red onion
- For the Vinaigrette
- 2 tablespoons fresh squeezed orange juice
- 1 1/2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1 teaspoon lime juice
- Pinch of cinnamon
- 1/4 cup olive oil
- Salt & pepper, to taste
Tomato Crostini with Whipped Feta

- 6 ounces good feta, crumbled
- 2 ounces cream cheese, at room temperature
- 2/3 cup good olive oil, divided
- 2 tablespoons freshly squeezed lemon juice
- Kosher salt and freshly ground black pepper
- 2 tablespoons minced shallots (2 shallots)
- 2 teaspoons minced garlic (2 cloves)
- 2 tablespoons good red wine vinegar
- 2 pounds ripe heirloom or cherry tomatoes, ½-inch-diced
- 3 tablespoons julienned fresh basil leaves, plus extra for serving
