- 1 1/4 t B POWDER
- 1 T CINNAMON
- 1 C CHOPPED NUTS
- 2 C GRATED ZUCCHINI
- 2 C GRATED CARROTS
- 1 C WELL DRAINED CRUSH PINEAPPLE
- 1 GRATED APPLE
- 1/2 C COCONUT
- 1 C MASHED BANANA

- 1 CAN CRUSHED PINEAPPLE WITH JUICE
- 1 CAN CHERRY PIE FILLING
- 1 WHITE OR YELLOW CAKE MIX
- 2 STICKS OLEO
- 1 C COCONUT
- 1 C CHOPPED WALNUTS
Pumpkin Spice Bread

Directions In a large bowl, combine the first nine ingredients
- 2 1/4 C SUGAR
- 2 C FLOUR
- 1 1/3 C CAKE FLOUR
- 2 t BAKING SODA
- 2 t CINNAMON
- 1 t SALT
- 1 t BAKING POWDER
- 3/4 t CLOVES
- 1/2 t NUTMEG
- 4 EGGS
- 1 15 OZ CAN SOLID PACK PUMPKIN
- 1 C BUTTERMILK
- 1/2 C UNSWEETENED APPLESAUCE
- 1/3 C CANOLA OIL

HEAT OVEN TO 450* SPRAY LARGE BAKING SHEET WITH OLIVE OIL COOKING SPRAY
- 1/2 C FLOUR
- 3/4 t SALT, DIVIDED
- 1/4 t GARLIC POWDER
- 2 EGGS, BEATEN
- 1/2 C PANKO
- 1/2 C GRATED PARMESAN CHEESE
- 1/4 t CAYENNE PEPPER
- 2 MEDIUM ZUCCHINI, HALVED CROSSWISE AND EACH CUT INTO 1/2 INCH STICKS

PREHEAT OVEN TO 350* GREASE AND FLOUR 9X5 LOAF PAN
- 1 1/3 C BROWN SUGAR
- 1 t CINNAMON
- 2/3 C SUGAR
- 1/2 C BUTTER, SOFTENED
- 2 EGGS
- 1 1/2 t VANILLA
- 1 1/2 C FLOUR
- 1 3/4 C BAKING POWDER
- 1/2 C MILK
- 1 C APPLE , PEELED AND CHOPPED
Island Coconut-Shrimp Rolls

Heat oven to 375°F. Line large cookie sheet with cooking parchment paper
- 16 cooked deveined large shrimp (about 1/2 lb), peeled (with tails left on)
- 1/4 cup cream of coconut (not coconut milk)
- 1 tablespoon rum or 1/4 teaspoon rum extract
