As you peel potatoes immediately immerse in very cold water

  • 1 large onion (you can use about 1/2 cup of scallions for a variation - delicious and colorful)

  • 2 Tbsp flour (we use unbleached all-purpose) or even matzah meal for a slightly different flavor
