Cheesy Chicken Fritters

Using a sharp knife, dice chicken into ⅓" thick pieces and place them in a large mixing bowl
- 3 large (or 1 1/2 lbs) chicken breasts
- 2 large eggs
- 1/3 cup mayonnaise
- 1/3 cup all-purpose flour (or cornstarch or potato starch for gluten free)
- 4 oz (or 1 1/3 cups shredded) mozzarella cheese
- 1 1/2 Tbsp chopped fresh dill
- 1/2 tsp salt and 1/8 tsp black pepper, or to taste
- Extra light olive oil, or any high heat cooking oil
- Ingredients for Garlic Aioli Dip (Optional)

- 1/4 tsp salt

In a medium sauce pan, cook rice in oil over medium heat for about 3 minutes

- 1 tablespoon vegetable oil
- 1 1/2 cups chicken broth
- 1/2 onion, finely chopped
- 1/2 green bell pepper, finely chopped
- 1 fresh jalapeno pepper, chopped

- 1/2 teaspoon sugar
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground mustard
- 1/2 cup shredded mozzarella cheese

- dill pickle juice
- 3 cup Peanut oil
- 1 Egg (I used 1 T powdered eggs and 2 T water)
- 1 cup Milk (I used 1%)
- 1 cup flour (I used whole wheat pastry flour)
- 2-1/2 Tablespoons Powdered sugar
- 1/2 Teaspoon Pepper
