Wafflemaker Hash Browns

Preheat a waffle iron on the regular setting and spray both sides with cooking spray
- Olive oil cooking spray, for spraying the waffle iron
- One 30-ounce bag frozen shredded hash browns, thawed
- 4 tablespoons (1/2 stick) butter, melted
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 3/4 cup grated Cheddar
- 3/4 cup chopped ham
Crockpot Mexican Street Corn & Chicken Chowder

Spray a large crockpot (I use a 6 quart crockpot) with nonstick spray
- 1 pound boneless skinless chicken breasts or thighs
- 2 cloves garlic minced
- 1 cup Swanson® Organic Free-Range Chicken Stock or broth
- 2 cans (14.75 ounces EACH) cream style corn
- 1 can (14.75 ounces) fire-roasted corn or regular canned corn or Mexicorn
- 1 can (15.5 ounces) black beans drained and rinsed
- 1 can (4 ounces) fire-roasted diced green chiles
- 2 teaspoons chipotle chili powder regular chili powder also works
- 1/2 teaspoon paprika
- 1 and 1/4 teaspoon ground cumin
- 2 cups Colby OR Monterey Jack Cheese freshly grated
- 2 cups half and half or heavy cream
- Salt and pepper to taste
- Optional additions: fresh lime, fresh cilantro, diced onion, hot sauce, sour cream, avocado
Beef Stroganoff

1.Shake beef, flour, salt & pepper in plastic bag
- Sirloin steak
- 2 TBSP butter
- 3 TBSP flour
- Salt & pepper
- 1 C hot water
- 1 TBSP sherry
- 1 TBSP catsup
- 2 TBSP instant beef bouillon
- 1/2 TSP Worcestershire sauce
- 1 C sour cream
Cheesy Potato Skins

Preheat oven to 400°F. Scrub the potatoes
- 5 each large russet potatoes
- 1 teaspoon olive oil
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 2 tablespoon freshly grated Parmesan cheese
Strawberry Milkshake Poke Cake

Prepare cake batter by adding in eggs, vegetable oil, and melted ice cream
- Pudding Mix:
- Strawberry cake mix
- 3 Eggs
- 1/3 Cup vegetable oil
- 1 Cup melted Strawberry Ice Cream
- (If more liquid is needed, add a little water until it is the consistency of cake batter. Each cake mix is different so you may or may not need to add any more liquid)
- 1 Small box vanilla instant pudding
- 2 Cups melted Strawberry Ice Cream
- Topping:
- Cool Whip
- 1/4 c. Melted Strawberry Ice Cream

- 1 cup water
- 1/2 teaspoon salt

- 2 Tbsp. each flour and chili powder
- 2 carrots, sliced
- 1 onion, chopped
- 3 stalks celery, sliced
- 1 cup frozen corn
- 1 can (15.5 oz.) kidney beans, rinsed
- 1 jar (16 oz.) TACO BELL® Thick & Chunky Salsa
- 1 cup water
- 1/4 cup BULL'S-EYE Original Barbecue Sauce
- 1 cup KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA
Hearts of Palm Salad

Put garlic, oil, vinegar, salt and pepper in bowl and mix, then add everything else
- 1 can artichoke hearts
- 1 can hearts of palm (California Girl)
- Cilantro
- 1 tomato
- 1 small cabbage (chopped)
- Garlic (clove)
- equal amounts rice vinegar and olive oil
- salt and pepper to taste
Sweet N Sour Thai Noddle Bowls

Bring a pot of water to a boil for the pasta
- Salt
- 1 pound whole wheat or whole grain spaghetti
- 3 tablespoons vegetable oil
- 3/4 pound chicken or pork cutlets, very thinly sliced
- 2 leeks, thinly sliced and thoroughly cleaned
- A couple of generous handfuls shitake mushrooms, stems removed and thinly sliced
- 3 to 4 cloves garlic, finely chopped
- 2 inches ginger root, grated
- 1/3 cup Tamari
- 2 tablespoons agave syrup or honey
- 2 limes, zest and juice of 1, the other cut into wedges, divided
- Sriracha or other hot sauce, to taste
- 2 cups shredded romaine or iceberg lettuce
- Cilantro or basil, chopped, for garnish
Crockpot Honey Balsamic Beef

Heat olive oil over medium high heat in a large nonstick skillet
- 3-4 lbs. beef chuck roast
- 1 tablespoon olive oil
- 1 14.5 oz. can 50% less sodium beef broth(approx. 2 cups)
- 1/2 cup quality balsamic vinegar
- 1/3 cup reduced sodium soy sauce
- 1 cup ketchup
- 1/2 cup honey
- 1/2 cup packed brown sugar
- 1 tablespoon Dijon mustard
- 3 tablespoons dry minced onion
- 1 tablespoon beef bouillon
- 1 tsp EACH garlic powder, dried oregano, dried basil
- 1/2 teaspoon smoked paprika
