Baked Potato Casserole

In a large bowl, combine potatoes and bacon
- 5 pounds red potatoes, cooked and cubed
- 1 pound sliced bacon, cooked and crumbled
- 4 cups cubed Cheddar cheese
- 4 cups shredded sharp Cheddar cheese
- 1 large onion, finely chopped
- 1 cup mayonnaise*
- 1 cup sour cream
- 1 tablespoon minced chives
- 1 teaspoon salt
- 1/2 teaspoon pepper
Split Pea Soup

In a large stock pot, cover peas with 2 quarts cold water and soak overnight
- 2 1/4 cups dried split peas
- 2 quarts cold water
- 1 1/2 pounds ham bone
- 2 onions, thinly sliced
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 pinch dried marjoram
- 3 stalks celery, chopped
- 3 carrots, chopped
- 1 potato, diced
Texas-Style Baked Beans

In a skillet over medium heat, brown the ground beef until no longer pink; drain fat, and set aside
- 1 pound ground beef
- 4 (16 ounce) cans baked beans with pork
- 1 (4 ounce) can canned chopped green chile peppers
- 1 small Vidalia onion, peeled and chopped
- 1 cup barbeque sauce
- 1/2 cup brown sugar
- 1 tablespoon garlic powder
- 1 tablespoon chili powder
- 3 tablespoons hot pepper sauce (e.g. Tabasco™), or to taste
Stuffed Green Peppers I

Bring a large pot of salted water to a boil
- 6 green bell peppers
- salt to taste
- 1 pound ground beef
- 1/3 cup chopped onion
- salt and pepper to taste
- 1 (14.5 ounce) can whole peeled tomatoes, chopped
- 1 teaspoon Worcestershire sauce
- 1/2 cup uncooked rice
- 1/2 cup water
- 1 cup shredded Cheddar cheese
- 2 (10.75 ounce) cans condensed tomato soup
- water as needed
BLT Dip

Lemon Champagne Cocktail

Cedar Planked Burgers

- 4 portobello mushrooms, stems removed
- 4 shiitake mushrooms, stems removed
- 2 Walla Walla onions, peeled and cut into 1/4-inch slices

- 2 untreated cedar planks, each about 5 by 12 inches, soaked in water to cover for at least 2 hours (available at hardware stores)

Asian Chicken Noodle Soup

I like it spicy, so I serve extra chili sauce on the side
- 1 tablespoon vegetable oil
- 1/2 medium onion, minced
- 1 garlic clove, thinly sliced
- 1 tablespoon freshly grated ginger
- 6 cups chicken broth
- 3 stalks lemongrass, the bottom 3 inches only, each stalk cut into three 1-inch pieces
- 1 teaspoon chili sauce
- Juice of 1 lime (about 2 tablespoons)
- 2 tablespoons soy sauce
- 2 teaspoons toasted sesame oil
- 2 chicken breasts, pounded and thinly sliced
- 2 cups Napa cabbage, thinly sliced
- 1 cup carrots, peeled and shredded
- 1 cup red bell pepper, thinly sliced
- 1 3- to 4-ounce pack rice noodles, prepared to package instructions
- Cilantro, mint, scallions, bean sprouts, for garnish

- 1 cup warm water

- 2 teaspoons kosher salt

- 3 1/3 cups all-purpose flour
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh basil
- 1/2 cup olive oil
- 1 teaspoon minced garlic
- 1/4 cup tomato sauce
- 1 cup chopped tomatoes
- 1/4 cup sliced black olives
- 1/4 cup roasted red peppers
- 2 cups shredded mozzarella cheese
