Melting Potatoes - Spicy Southern Kitchen

Instructions Place oven rack in upper-middle position of oven and heat oven to 500 degrees
- 3 pounds Yukon Gold potatoes, peeled
- 6 tablespoons butter, melted
- 1 tablespoon chopped fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/4 cups chicken broth
- 2 garlic cloves, lightly crushed and peeled
Ranch Chicken & Rice

In a large mixing bowl season chicken with salt and black pepper
- 6 –8 boneless chicken thighs
- kosher salt
- Freshly ground black pepper
- 1 c. buttermilk ranch dressing
- 1/4 tsp. cayenne
- extra-virgin olive oil
- 3 garlic cloves, minced
- 1 onion, chopped
- 2 c. low-sodium chicken stock
- 1 bunch kale, chopped into 1" pieces

- 1 c. white rice

- 1/2 cup black or brown mustard seeds
- 1/4 cup yellow mustard seeds
- 1 cup stout
- 1 cup dry mustard powder (such as Coleman's)

- 2 tablespoons granulated sugar

Instructions Preheat the oven to 400 degrees F
- 2 Tbsp butter
- 2 Tbsp tapioca starch
- 2 cups unsweetened almond milk
- 1 cup non-fat cottage cheese
- 1 head garlic
- 1 Tbsp olive oil
- 4 oz low-fat cream cheese, cubed
- 1 1/2 cup shaved parmesan
- 16 oz frozen spinach, thawed and drained
- 1 (14.5 oz) can chopped artichokes
- 2 whole roasted red peppers (from a jar)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- Grated Parmesan, for garnish
