- 1 1/2 tablespoons baking powder
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon baking soda

- 1 ⁄4 cup reduced-calorie mayonnaise
- 1 teaspoon Dijon mustard
- 2 teaspoons grated lemon zest
- 1 ⁄2 teaspoon salt
- 4 drops hot pepper sauce
- 1 (3 1/2 lb) chicken, cut into eighths, skin removed
- 3 ⁄4 cup corn flake crumbs
