Fresh Strawberry Cake

Grease and flour 2 9” round cake pans; set aside
- 3 cups cake flour
- 2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup (1.5 sticks) unsalted butter, room temperature
- 1 1/2 cups granulated sugar
- 3 eggs
- 1/2 cup sour cream
- 2 Tbsp vanilla extract
- 3/4 cup milk

- 3 cups heavy cream
- 8 oz. cream cheese, room temperature
- 3/4 cup granulated sugar
- 1 Tbsp vanilla extract
- 3 pints (~2 pounds) strawberries, stems and hulls removed

25 Minute Garlic Mozzarella Margherita Pasta (Lightened Up)

Cook pasta al dente according to package directions in generously salted water
- 1 lb spaghetti or pasta of choice
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/4 onion, chopped
- 6 Roma tomatoes, chopped divided
- 4-6 garlic cloves, minced
- 1/4 cup all-purpose flour
- 1 1/2 cups low sodium chicken broth
- 1 1/2 cups milk
- 2 teaspoons chicken bouillon
- 1 teaspoon dried parsley
- 1/2 tsp EACH dried oregano, dried basil, salt
- 1/4 tsp EACH pepper, red pepper flakes
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 oz. cream cheese, softetned (I use 1/3 less fat)
- 1/4 cup loosely packed basil, chopped
- freshly grated Parmesan cheese

- 1/4 cup vegetable oil, divided
- 3 medium cloves garlic, minced
- 1/4 teaspoon kosher or sea salt, plus more for seasoning
- 1/2 teaspoon chile powder
- 1/4 teaspoon ground cumin

- 1/4 teaspoon sugar

- 1 pound boneless, skinless chicken breast, sliced in strips

Grilled Brown Sugar Pork Chops

Preheat an outdoor grill for high heat
- 1/2 cup brown sugar, firmly packed
- 1/2 cup apple juice
- 4 tablespoons vegetable oil
- 1 tablespoon soy sauce
- 1/2 teaspoon ground ginger
- salt and pepper to taste
- 2 teaspoons cornstarch
- 1/2 cup water
- 6 boneless pork chops
Hot Buttered Bourbon

In a small sauce pan over low heat, bring cider to a gentle simmer
- 1 cup apple cider
- 2 tablespoons unsalted butter, softened
- 1 tablespoon honey
- 1/4 teaspoon cloves
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/2 cup (4 ounces) bourbon

BLACKBERRY RUM FIZZ RECIPE

- 6 ozs blackberries
- 1/2 cup granulated sugar
- 1/2 cup water
- Blackberry Rum Fizz
- 2 shots rum, chilled
- 6 ozs sparkling water, chilled
- 2 tblsps blackberry syrup
Crab Cakes with Spicy Cream

Directions Preheat the oven to 425 degrees
- Canola oil cooking spray
- 2 teaspoons canola oil
- 2 scallions, thinly sliced, green and white parts
- 1 medium green bell pepper, finely diced
- 1 jalapeno pepper, finely diced
- 1 tablespoon finely grated fresh ginger root
- 2 cloves of garlic
- 1 pound of crab claw meat, picked over
- 1 teaspoon finely grated lime zest
- 2 tablespoons fresh lime juice
- 1/4 cup finely chopped fresh cilantro leaves, plus 18 whole cilantro leaves
- 1 large egg, beaten to mix
- 1 cup of Panko breadcrumbs, or regular unseasoned breadcrumbs
- 3 tablespoons canola mayonnaise
- 1/2 teaspoon salt
- 1/3 cup nonfat, plain Greek-style thickened yogurt
- 1 teaspoon hot chili-garlic sauce, such as Sriracha, plus more to taste
