- 13 slices of American cheese (3/4 pound), 4 slices torn

Instructions Peel and devein shrimp, leaving tails on
- 1 pound jumbo shrimp, shell and tail on
- 4 tablespoons vegetable oil, divided
- 2 gloves garlic, minced or pressed
- 1/4 teaspoon kosher salt
- 1/4 teaspoon red chili flakes
- 1/2 onion, peeled and sliced
- 1/2 red bell pepper, seeded and sliced
- 1/2 orange bell pepper, seeded and sliced
- 1/2 yellow bell pepper, seeded and sliced
- 1 cup coconut milk
- 4-6 tablespoons high quality fish sauce (start with 4 tablespoons and add more to taste)
- 2 tablespoons peanut butter
- 2 tablespoons lime juice (about 1/2 large lime, juiced)
- 1 tablespoon brown sugar
- 2 teaspoons ground ginger
- 2 tablespoons basil leaves, chopped
- 2 tablespoons cilantro, chopped
- 1 green onion, chopped
- Red jalapeno pepper, thinly sliced (optional)

- 8 large fresh mushrooms
- 4 yellow squash
- 4 zucchini
- 2 red bell peppers
- 2 yellow bell peppers

- 1/2 cup soy sauce
- 1/4 cup lemon juice
- 2 garlic cloves, pressed
- 1/4 tsp pepper
- salt to taste
Barbecued Romaine Salad with Chili Vinaigrette

FOR THE VINAIGRETTE: In a screw-top jar, combine the vinegar, oil, garlic, salt, chili powder and pepper
- For the Vinaigrette:
- 2 ounces red wine vinegar
- 2 ounces olive oil
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4-1/2 teaspoon chili powder
- 1/4 teaspoon pepper
- For the Salad:
- 1 head (about 1 pound) romaine lettuce
- 2 ounces Gorgonzola, blue or feta cheese, crumbled
- 1 ounce broken pecans or walnuts, toasted

- 16 oz (2 cups) Cranberry Cocktail Juice
- 16 oz (2 cups) Lemon Lemon soda
- 3 oz (approx generous 1/3 cup) Limeade concentrate, thawed

- Limes & Cranberries for garnish
- Gin or Vodka (optional)
