Lemongrass, Lime & Thai Basil Mojito

This drink is a riff on the classic mojito, but made with very traditional Thai ingredients
- 1/4 cup + 2 teaspoons sugar
- 8 ounces white rum
Fresh Peach Margaritas - Baker by Nature

To make the fresh peach puree: Peel and pit the fresh peaches
- 6 Ripe Peaches, cut in half, pitted, and peeled (don't peel if you like a chunkier puree)
- 1/4 Cup Freshly Squeezed Orange Juice
- 3 Tablespoons Confectioners' Sugar
- 1 Cup tequila (I use silver but whatever you know you like is fine)
- 1/2 Cup Fresh Lime Juice (or bottled lime juice NOT from concentrate)
- 1/2 Cup Triple Sec
- 1 lime, cut into wedges
IPA Ceviche - The Beeroness

Directions Add the lemon/lime juice and raw shrimp to a small bowl
- 1/4 cup fresh squeezed lemon
- 1/4 cup fresh squeezed lime juice
- 1 1/2 lb raw shrimp, shell & tail removed, chopped
- 1/2 cup IPA Beer
- 1 yellow onion diced
- 3 cups tomatoes, diced
- 1 large jalapeno, diced, stem and seeds removed
- 1/2 cup cilantro
- 1/4 tsp salt
- 1 tsp red pepper sauce (such as Sriracha)

Rocks glass, chilled Pour ingredients into iced mixing glass Shake and strain
- 1 oz Chambord Liqueur
- 1 oz Kahlua Coffee Liqueur
- 1 oz Disaronno Amaretto Liqueur
- 1 oz half & half cream
Smoked Baby Back Ribs with Espresso Barbecue Sauce

- 6 pounds (3 racks) Baby Back Ribs
- Sea Salt
- Freshly ground black pepper
- 2 Tbsp olive oil
- 1 small onion, finely chopped
- 2 Tbsp minced garlic
- 2 cups chopped fresh tomatoes or 1 can (15 oz) tomatoes
- 3/4 cup molasses
- 3/4 cup honey
- 2 Tbsp course Dijon mustard
- 1/2 cup espresso (I used dried espresso powder reconstituted with water)
Blueberry Lemon Pound Cake

Instructions For the cake Preheat the oven to 325 degrees F
- FOR THE GLAZE:
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1/4 cup lemon juice
- 2 tbsp lemon zest
- 1 tsp vanilla extract
- 1 tsp baking powder
- pinch of salt
- 3 eggs plus 1 egg yolk
- 1-3/4 cup all purpose flour (sift if clumpy)
- 1-1/2 cups fresh blueberries
- 1-1/2 cup confectioner’s sugar, sifted
- 2 tbsp unsalted butter, melted
- 2 tsp lemon juice
- 3-4 tbsp gin (substitute whole milk, if desired)

Chilled Butter Bean Soup with Peanut-Corn Relish

Recipe adapted from Scott Crawford, Standard Foods, Raleigh, NC
- 4 cups fresh shelled butter beans or three 15-ounce cans butter beans, drained
- 2 medium leeks, white parts only, halved lengthwise and thinly sliced
- 3 cups water
- 1 tablespoon extra-virgin olive oil
- Salt, to taste
- 1 cup raw peanuts in shell
- 1 teaspoon sherry vinegar
- 1/4 cup cider vinegar
- 1 fresh bay leaf
- 1 teaspoon pickling spice
- 1 teaspoon sugar
- 1 cup cherry tomatoes, halved
- 2 ears corn, boiled until tender and removed from cob
- 1 red pepper, roasted, peeled, seeded and finely diced
- 1 teaspoon finely chopped fresh thyme
- 1 teaspoon peanut oil
- Salt and pepper to taste
- 1/4 cup roasted peanuts, for garnish
- Chive blossoms, for garnish
