Coleslaw with Creamy Pineapple Dressing

- 1/4 pound (1 stick) unsalted butter
- 1 teaspoon cayenne pepper
- 4 teaspoons Frank's Hot Sauce, or 1 teaspoon Tabasco

- 1 1/2 cups crumbled Gorgonzola or other blue cheese
- 1 cup good mayonnaise
- 3/4 cup sour cream
- 2 tablespoons milk
- 3/4 teaspoon Worcestershire sauce
- 1 1/2 teaspoons kosher salt
- 3/4 teaspoon freshly ground black pepper
- Celery sticks, for serving

For gradient effect first add blue raspberry then float sour apple and rum
- 1 1/2 oz Blue Raspberry
- 1 oz Sour Apple
- 2 oz White Rum
- 2 oz Pineapple Juice

Combine the cornmeal, whole wheat pastry flour, all-purpose flour, baking powder and salt in a large bowl
- 1 cup yellow cornmeal
- 1/2 cup whole wheat pastry flour
- 1/2 cup all-purpose flour
- 1 tablespoon + 2 teaspoons baking powder
- 2 tablespoons sugar
- 1 teaspoon kosher salt
- 2 large eggs, at room temperature
- 1/4 cup unsweetened applesauce
- 2 tablespoons canola oil
- 1 cup skim milk
- 1/2 cup part-skim shredded cheese: any combo of sharp cheddar, Colby, Monterrey Jack, or Pepper Jack (I did half cheddar, half Monterrey)
- 1/4 cup + 2 tablespoons chopped scallions (white and green parts), plus extra for garnish (2-3 scallions total)
- 2 tablespoons seeded and minced fresh jalapeño peppers (about 2 peppers)
