Coconut Chocolate Cake

Mix cake according to pkg directions, using a 15x10x1" or 13X9" baking pan
- 1 pkg chocolate cake mix
- 1-1/2 cups evaporated milk, divided
- 1-1/2 cups sugar, divided
- 24 large marshmallows
- 1 pkg (14 oz) flaked coconut
- 1/2 cup butter
- 2 cups semisweet chocolate chips
- 1/2 cup slivered almonds, toasted
Two-Toned Shredded Potatoes

Preheat oven to 375 degree F
- 2 Idaho Russet potatoes (about 1 pound), peeled and shredded
- 2 sweet potatoes (about 1 pound), peeled and shredded
- 1 tablespoon salt
- 1 cup sugar (see Note)
- 1/2 cup light corn syrup
- 1/4 cup water
- 1/4 cup (1/2-stick) butter
- 1 cup apple juice
Easy Meatloaf

Combine ground beef, onion soup mix, stuffing, eggs,warm water
- 1 1/2 lbs. ground beef
- 1 packet onion soup mix
- 1 box stovetop-type stuffing
- 2 eggs
- 1 cup warm water
DIY Homemade Chili Seasoning Mix

Combine all ingredients in a jar or small container
- 4 tablespoons chili powder
- 1 tbls all purpose flour
- 3 teaspoons table salt
- 2 teaspoon black pepper
- 1 teaspoon red pepper flakes
- 1/4 teaspoon cayenne pepper
- 3 teaspoons cumin
- 1 teaspoon granulated garlic
- 1 teaspoon dehydrated garlic
- 2 teaspoons paprika
- 1 teaspoon onion powder
- 1 teaspoon oregano
Cauliflower and Tomato Salad

1.Drain tomatoes and reserve 1/4 cup liquid
- 1 can (14.5 oz each) Diced Tomatoes
- 2 cups fresh cauliflower florets
- 1 can (15 oz each) garbanzo beans, drained, rinsed
- 1/4 cup thinly sliced red onion
- 3 tablespoons Canola Oil
- 2 tablespoons chopped fresh Italian (flat-leaf) parsley
- 1 tablespoon cider vinegar
- 1/2 teaspoon garlic salt
- 1/8 teaspoon ground black pepper
Pork Stew with Ancho Chiles and Squash

Preheat oven to 325°F. Place anchos in a pot with the stock and bring to simmer to soften peppers
- 4 ancho chiles, seeds and stems removed
- 3 cups chicken stock
- 2 teaspoons each coriander, cumin and fennel seed (you can use ground but toasting the seeds and grinding them yourself will give more nutty, smoky flavor)
- 2 tablespoons canola or olive oil
- 3 pounds pork shoulder/butt, cut into 2-inch cubes
- Kosher salt and pepper
- 2 onions, chopped
- 6 cloves garlic, sliced
- 2 pounds kabocha or butternut squash, peeled and cut into 2-inch pieces
- 1 tablespoon honey
- Toasted pepitas, lime-pickled onions and/or cilantro leaves, for topping
Classic Chicken Pot Pie

Preheat oven to 400 F. Heat butter in a large skillet over medium-high heat
- 4 tablespoons butter
- 3 stalks celery, finely chopped
- 3 medium carrots, peeled and finely chopped
- 1 cup finely chopped onion
- 1/4 cup flour
- 2 cups chicken broth
- 1 teaspoon chicken bouillon granules
- 1 cup heavy cream
- 2 cups chopped cooked chicken (or rotisserie chicken)
- 1/2 cup frozen green peas, thawed
- 1 teaspoon ground thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 refrigerated pie crust, softened as directed on box or Never-Fail Pastry (recipe follows)
Creamy One-Pot Linguine with Chicken, Corn and Green Chiles

1 In deep 12-inch skillet with lid, combine water, onion, garlic, corn, green chiles and linguine
- 2 1/2 cups water
- 1/4 cup chopped onion
- 1 clove garlic
- 1 cup frozen whole kernel corn
- 1 can (4.5 oz) chopped green chiles
- 8 oz uncooked linguine
- 2 cups shredded deli rotisserie chicken
- 1/3 cup grated Parmesan cheese
- 1/4 cup whipping cream
- Sliced green onions, if desired
Ham and Cheese Melts

- 3/4 pound cooked ham, coarsely chopped
- 1 cup (4 ounces) shredded Cheddar cheese
- 1/2 cup medium salsa
- 6 scallions, sliced

- 2 Pound Boneless Chuck Roast or Beef Stew Meat
- 1 each 1 each medium sized round onion, chopped
- 2 Tablespoon tomato paste
- 3 Tablespoon flour
- 1 leaf bay leaf
- 3 each 3 each medium sized carrots, peeled and chopped
- 2 each 2 each medium sized potatoes, peeled and chopped
- 4 stalk celery, chopped
- 1 each 1 each 15 oz. can diced tomatoes
- 1 each 1 each 15 oz. can tomato sauce
- 2 Tablespoon vegetable oil
- each salt and pepper to taste
