Mom's Potato Salad

Put washed potatoes and eggs in pot and add enough water to cover ingredients
- 6 salad potatoes, boiled and skinned
- 12 eggs, hard boiled, grated
- 1 carrot grated and excess liquid squeezed out*
- 1 tablespoon finely minced onion*
- 2 cups mayonnaise (Start with 2 cups, add more if necessary)
- 1 can chopped olives
- salt & pepper to taste
- 2 tablespoons yellow mustard
- 1 can water-packed tuna, drained
Cola Pulled Pork

Add the 2 cans of Cola and the seasoning packet into the Crock Pot
- For the Cola Sauce:
- 1 Pork Shoulder (approx. 5 lbs.)
- 2 (8 oz.) Cans of any Cola of your choice
- 1 Packet of Poultry/Pork Seasoning
- Potato Rolls or your fave rolls
- Cole Slaw
- Thinly sliced Onions
- All of the Cola and Pork drippings from the Crock-Pot
- 1 tbsp. Ketchup
- 1 tbsp. Chile Powder
- 1 tbsp. Steak Sauce
- 1 tbsp. Corn Starch
- S&P to taste
Crunchy Onion Barbecue Chicken

Place barbecue sauce in a shallow bowl
- 1/2 cup barbecue sauce
- 1-1/3 cups French-fried onions, crushed
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon pepper
- 4 boneless skinless chicken breast halves (6 ounces each)
Baked Shrimp Dip

Preheat oven to 350 degrees F
- 1 (8-ounce) package cream cheese, softened
- 1 cup mayonnaise
- 1/2 cup shredded mozzarella cheese
- 3 garlic cloves, minced
- 1 tablespoon Worcestershire sauce
- 1 tablespoon lemon juice
- 1/4 teaspoon hot sauce
- 1/2 pound frozen salad shrimp, thawed
- 1/2 cup sliced scallion (green onion)
Beef Stew

I like to brown my meat before I add it to the crock pot
- 1 package of stew meat (about a pound to a pound in half works well)
- 3 T. flour (Gluten Free-use brown rice flour)
- 2 T. oil (for browning the meat)
- 1 whole onion, diced or sliced
- 3 stalks of celery, chopped
- 2 carrots, peeled and diced
- 2 potatoes, diced
- 3 garlic cloves, minced
- 1/4 cup of fresh herbs ( I used Thyme, Basil and Oregano...it's in my garden)
- 1/2 bottle of beer (optional) I would choose a strong flavor, it adds a wonderful undertone to the stew.
- 5 cups of beef broth
- 1 tsp. of salt
- pepper to taste
Foolproof Pot Roast

Heat roast according to package directions
- 1 (16-ounce) package fully cooked beef pot roast in gravy
- Nonstick cooking spray
- 1 large onion, thinly sliced
- 1 tablespoon light stick butter
- 1/2 teaspoon sugar
- 1 teaspoon balsamic vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Pepper Steak and Gravy

Cut the steak into small strips
- 1 lb thin cut beef bottom steak
- 1/2 small onion, chopped
- 5 mini bell peppers, or 2 large bell peppers, chopped
- 1/3 cup chopped green onion
- 1 tbsp vegetable oil
- 1 tsp salt
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 0.8 oz envelope of onion gravy seasoning
- 1 1/2 cup water
Garden Vegetable Rice

Melt Parkay in medium skillet over medium-high heat
- 1 tablespoon Parkay® Original Spread-tub
- 3/4 cup long-grain white rice, uncooked
- 1/2 teaspoon minced garlic
- 1-1/2 cups reduced-sodium chicken broth
- 1 cup frozen mixed vegetables
- 1/4 teaspoon dried thyme leaves
- 1/8 teaspoon salt

- 12 ounces angel hair
- 1 cup finely sliced carrot
- 1 cup frozen French green beans
- 4 tablespoons sesame oil
- Sauce:
- 1/3 cup crunchy peanut butter
- 1/4 cup hot water
- 2 small cloves minced, fresh garlic
- 1/2 tablespoon ground ginger
- 1 tsp turmeric
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 tablespoons rice vinegar
- 1/2 tablespoon chili-garlic sauce
- 1 tsp chili flakes (or fresh chili to taste)
- For Garnish:
- 1/2 cup green onion, chopped
- 1 tablespoon sesame seeds

- 2 cups flour
- 2 teaspoons baking soda
- 1 tablespoon cinnamon
- 1/2 tsp. allspice
- 1/2 tsp. ground cloves

- 1 teaspoon salt
- 1 cup sugar
- 1/2 cup brown sugar, firmly packed
- 3/4 cup canola oil
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 cups fresh mango pulp
- 1/2 cup coconut
