Strawberry Spectacular

Break angel food cake into bite size pieces into a 9" x 13" dish
- 1 Angel Food Cake {prepared} Like Duncan Hines
- 1 (8 oz) box of 1/3 reduced fat Cream Cheese
- 1 (14 oz) can fat free Sweetened Condensed Milk
- 1 (16 oz) container lite Cool Whip (large container)
- 2 (10 oz) containers frozen strawberries in their juice or fresh strawberries, thawed*
- fresh strawberries for garnish (if desired)
Grilled Honey-Cumin BBQ Pork Packs

1 Heat coals or gas grill for direct heat
- 1/2 cup barbecue sauce
- 1/4 cup honey
- 2 teaspoons ground cumin
- 4 pork boneless rib or loin chops, 3/4 to 1 inch thick (1 1/4 pounds)
- 2 large ears corn, each cut into 6 pieces
- 1 cup baby-cut carrots, cut lengthwise in half
- 2 cups (from 1-pound 4-ounce bag) refrigerated cooked new potato wedges
- 1 teaspoon salt

- SHORTCAKE:
- 1/4 cup fat-free plain yogurt
- 2 tablespoons Light Sour Cream
- 2 tablespoons confectioners' sugar
- 1/4 teaspoon rum extract
- 1 pint fresh strawberries, sliced, divided
- 2/3 cup all-purpose flour
- 2 tablespoons whole wheat flour
- 2 tablespoons plus 1/2 teaspoon sugar, divided
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 5 tablespoons cold butter
- 1/3 cup buttermilk
Apple and Fennel Salad

Thinly slice apple into matchsticks and place in a bowl with fennel
- Half a large apple
- 1/2 cup thinly sliced fennel
- 2 teaspoons reduced-fat vinaigrette dressing
- 1 tablespoon freshly shaved Parmesan cheese
Lemon Cheesecake with Strawberry Basil Topping

Preheat oven at 350F. Grease an 8-inch spring form pan
- Crust:
- 1 1/2 cups graham cracker crumb
- 1 stick unsalted butter; melted
- 1/2 teaspoon salt
- Cheesecake:
- 2 packages of Philadelphia cream cheese; room temperature
- 2 cups sour cream; room temperature
- 1 cup sugar
- 1 tablespoon vanilla extract
- zest and juice of 1 lemon
- 3 large eggs separated; room temperature
- Topping:
- 1 cup fresh strawberry; halved
- 1/4 cup sugar
- 2 tablespoons lemon juice
- 1/4 cup fresh basil leaves
Deep Dish Taco Pizza

1 Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray
- 1 can Pillsbury® Grands!® Homestyle refrigerated biscuits
- 1 pound ground beef
- 1 package taco seasoning mix
- 1 cup shredded Cheddar cheese (4 oz)
- Shredded lettuce
- Chopped tomato or halved cherry tomatoes
- Halved or sliced pitted ripe olives
- Sour cream
Southwestern Chicken Salad

- 6 plum tomatoes, chopped
- 2 cups cooked, chunked boneless, skinless chicken breast (12 ounces)
- 1/2 red onion, chopped
- 2 jalapeno peppers, seeded and minced

- 3 tablespoons lime juice
