In a large saucepan over medium-high heat, combine the tea, sugar, 1/2 cup kosher salt, lemon quarters, and zest
- MARINADE (BRINE)
- 1 quart very strong brewed tea (we used Lipton)
- 1 cup sugar
- 1/2 cup kosher salt
- 1 lemon, zested and quartered
- 1 quart ice water
- 8 chicken legs and thighs (bone-in and skin-on)
- COATING
- 4 cups all-purpose flour, divided
- 2 cups masa harina (corn meal flour)
- 2 tablespoons Old Bay seasoning
- 1 tablespoon chili powder
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 4 large eggs
- 1/2 cup buttermilk
- Vegetable oil for frying

Brown meat in large saucepot on medium heat; drain
- 2 lbs. lean ground beef
- 1 small yellow onion, chopped
- 1 small green pepper, chopped
- 2 cans (16 oz. ea.) Bush's Best Dark Red Kidney Beans, undrained
- 2 cans (16 oz. ea.) Bush's Best Pinto Beans, undrained
- 2 cans (16 oz. ea.) Bush's Best Black Beans, undrained
- 1 can (14.5 oz.) diced tomatoes, undrained
- 1 can (6 oz.) tomato paste
- 2 envelopes chili seasoning mix
- 1/2 teaspoon ground cinnamon
- 1-1/4 cups sour cream
Homemade Spaghetti Sauce

1. Heat olive oil over medium high heat
- 3 tablespoons olive oil
- 2 cups onion, chopped and divided
- 1 red pepper, coarsely chopped
- 2 pounds hamburger (at least 90% lean)
- 5 cloves garlic, finely chopped
- 1 12 oz. can tomato paste
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 3 teaspoons dried oregano
- 3 teaspoons dried basil
- 1 1/2 teaspoons dried thyme
- 2 14-oz. can Italian-style diced tomatoes
- 2 28-oz. can crushed tomatoes
- 1 carton fresh mushrooms (optional)
- 1 1/2 cups beef stock or beef broth
- 2 tablespoons brown sugar
- 2 bay leaves
- 2 tablespoons balsamic vinegar (I used 1 Tbsp.)

- 1 can whole kernel corn, drained
- Salt & pepper, to taste
- 1 Tbs. Chili powder, more or less to your taste
- 1 (28 oz) can chopped tomatoes, undrained
- 3/4 cup water
- 1 can Rotel, undrained, **optional**
- 8 slices American cheese
- Additions: mushrooms, Cajun seasonings, etc.
Fluffernutter Rice Krispie Treats

- 1/4 cup unsalted butter
- 1/2 cup creamy peanut butter
- 5 cups Rice Krispies cereal
- 1 1/4 cup mini marshmallows
