Scrumptious Pumpkin Bread

Combine pumpkin, one cup sugar, brown sugar, 3 egg whites, milk and oil in a large bowl
- 1 c. canned pumpkin
- 1 c. plus 2 T. sugar, divided
- 1/2 c. brown sugar, packed
- 4 egg whites, divided
- 1/2 c. fat-free milk
- 1/4 c. canola oil
- 2 c. all-purpose flour
- 2-1/2 t. baking powder
- 2 t. pumpkin pie spice
- 1/4 t. salt
- 1 c. walnut pieces
- 8-oz. pkg. Neufchâtel cheese, softened
Snickers Cinnamon Rolls

Combine yeast, water and 1 tablespoon sugar in a small mixing bowl
- Dough:
- 1 T active dry yeast
- 1 T granulated sugar
- 1 T honey
- 1 1/2 cups hot water (100 to 110 degrees)
- 4 to 4 and 1/2 cups bread flour
- 1 T powdered milk
- 1/2 cup granulated sugar
- 1/4 tsp salt
- 2 large eggs, beaten
- Filling:
- 8 caramel apple wraps
- 2 cups chocolate chips
- 1 and 1/2 cups peanuts, chopped
- OR
- 8 Snicker's candy bars, chopped small
- Topping
- 1/2 c fudge topping for ice cream

1 Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan with shortening or cooking spray
- Bread:
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla
- 1 cup sour cream or plain yogurt
- Grated peel and juice of 1 lemon

- 2 tablespoons Flour
- 1 teaspoons Salt
- 1 Scallion; finely chopped
- 1 Lemon; juiced
- 2 tablespoons Parsley; chopped
- 4 cloves Garlic; minced
Five Minute Tex Mex Couscous

- 1 (10-ounce) package couscous
- 1 (15-1/2-ounce) can black beans, drained and rinsed
- 1 (15-1/2-ounce) can corn, drained and rinsed
