Cream of Corn Soup

Sauté the onion dices in the butter until they are tender and translucent but not browned
- 1 can of whole kernel corn, drained
- 1 sweet onion, diced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 1/2 cups chicken broth
- salt to taste
- 1/2 cup cream
- hot sauce to taste
- paprika or chili powder for garnish
Elba's Savory Turkey

In a small bowl, combine, poultry seasoning, sage and Montreal Chicken Seasoning
- 2 tablespoons poultry seasoning
- 2 teaspoons sage
- 4 T. Montreal Chicken Seasoning
- 1 (15 pound) turkey, washed and patted dry
- 2 carrots, cut in chunks
- 1 onion, cut in chunks
- 2 stalks celery, cut in chunks
- 1 tablespoon flour
Chicken Enchilada Casserole

Make sauce by combining SOS Mix, water and green chilies
- 2/3 cup SOS Mix (recipe follows)
- 2 1/2 cups water
- 1 can (4 oz) green chilies, chopped
- 1 lb cooked, diced or shredded chicken
- 1 cup nonfat sour cream
- 3/4 cup cheddar cheese, grated
- 1 pkg (10 1/2”) flour tortillas

- 1/3 cup SOS Mix (recipe follows)
- 1 1/4 cups cold water
- 1 cup cheese, grated

Preheat oven to 350º. Sift flour into a large bowl
- 2 C All Purpose Flour
- 2 tsp Baking Soda
- 1 C Sugar
- 2 tsp Cinnamon
- 3 Eggs

- 1/4 C Oil

- Crust:
- 2 cups finely crushed pretzel crumbs
- 1/4 cup packed brown sugar
- 3/4 cup butter, melted
- Pie:
- 6 oz cream cheese, softened
- 2 1/2 cups creamy peanut butter
- 1 1/2 cups granulated sugar
- 1 tsp vanilla
- 1 3/4 cup heavy cream, COLD
- 4 oz good quality semi sweet chocolate, roughly chopped
Beef Roulades with Walnut Parsley Pesto

1 Start by making the pesto
- Pesto:
- 1 cup Fresh parsley; chopped
- 1/2 cup Walnuts; shelled
- 1/4 cup Parmesan or Pecorino cheese; grated
- 2 Garlic cloves; roughly chopped
- 1/4 teaspoon salt
- 1/4 cup Olive oil
- Flank Steak Roulade
- 1/2 pound thin cut bacon
- 1-1/2 to 1-3/4 pound flank steak
- Salt and pepper to taste
- Lemon; cut into wedges
BBQ Pork Ribs #2

Bring water to a boil in a large stockpot
- 3 qts. water
- 4 lbs. pork ribs, cut into
- serving-size portions
- 1 onion, quartered
- 2 t. salt
- 1/4 t. pepper
- 1/2 c. vinegar
- 1 T. lemon juice
- 1/2 c. chili sauce
- 1/4 c. Worcestershire sauce
- 2 T. onion, chopped
- 1/2 c. brown sugar, packed
- 1/2 t. dry mustard
- 1/8 t. garlic powder
- 1/8 t. cayenne pepper
Braised Red Potatoes with Lemon and Chives

Arrange potatoes in a single layer, cut side down, in 12-inch nonstick skillet
- 1 1/2 pounds small red potatoes with peel, halved
- 2 cups water
- 3 tablespoons butter
- 3 sprigs fresh thyme
- Salt and pepper
- 1 teaspoon lemon juice
- 2 tablespoons minced fresh herbs such as chives or parsley
