Red Velvet Baked Donuts

Preheat oven to 425 degrees
- Donuts:
- 2 cups cake flour, sifted
- 3/4 cups sugar
- 2 tsp baking powder
- 5 tbsp unsweetened chocolate
- 1 cup buttermilk
- 2 eggs
- 1 tsp vanilla
- 2 tbsp melted butter
- 1/2 tsp red food coloring
- Glaze:
- 2 cups confectioners sugar
- 1/2 tsp almond extract
- 4 tbsp heavy cream
- Sprinkles
Copycat Zippy's Chili

Seed and tear the 4 chili pods into small (1") pieces, place in the two cups of warm water to soak for 20 minutes
- 2.5 lbs. Ground Beef
- 2 large Onions (about 2 cups diced)
- 2-3 Ribs Celery (about 1 cup diced)
- 1 Green Bell Pepper (about 1 cup diced)
- 4 Dried Anaheim Chili pods (seeded)
- 9 cloves garlic (minced or run through a garlic press)
- 1 ea. 14.5 Oz. can Diced Tomatoes
- 1 ea. 14.5 Oz. can Tomato Sauce
- 1 ea. 14.5 Oz. can Kidney Beans (if you like more, add two cans or delete entirely)
- 2 Cup Beef Stock (or Chicken Broth)
- 2 Cups warm water
- 1 ea. Chorizo Sausage (dry type)
- 3 Tbl. Ground Cumin
- 2 Tbl. Paprika
- 1 Tbl. Coriander
- 1 tsp. Oregano
- 1 tsp. Ground Ginger Powder
- 1/4 cup Masa Harina (Mexican corn flour, use regular flour if not available)
- 3 Tbl. Olive Oil
- 2-4 Tbl. Mayonnaise (more on this later)
- 2 Bay Leaves
Mini Strawberry and Blueberry Ice Cream Pies

Let ice cream soften just enough so that you can stir it
- 8 sugar cones
- 1/2 cup walnuts
- 1 egg white
- 2 tbsp. light butter, melted
- 1 1/2 cups low-fat vanilla ice cream (I used Edy's Slow Churned), divided
- 6 tbsp. mashed blueberries
- 2/3 cup lite cool whip or light whip cream
- 14 Fresh sweet cherries
- 5 tbsp. chocolate sauce
- 6 tbsp. mashed strawberries

- 1 package Angel Food Cake Mix
- 1 20 ounce can of crushed pineapple
Red Velvet Crepes with Cheesecake Mousse and Raspberry Sauce

For crepes: In a blender, eat eggs until light
- Crepes:
- 2 eggs
- 1 1/4 cup milk
- 1 tsp sugar
- dash of vanilla
- 3/4 cup flour
- 1 1/2 Tbsp cocoa powder
- 1 tsp red food coloring
- butter (to place in the pan when cooking the crepes)
- Cream Cheese Mousse:
- 1 1/2 cup whipping cream
- 1/2 cup milk (I used skim)
- 2 Tbsp. powdered sugar
- 1 (3.5 oz) package instant cheesecake pudding
- Easy Raspberry Sauce:
- 1/2 cup water
- 1/2 cup sugar (you can add a little more at the end if the sauce is too tart)
- 1 Tbsp. cornstarch
- 1 tsp. lemon juice
- 2 cups frozen raspberries
- For serving: powdered sugar and sweetened whipped cream, if desired

- 3 eggs
- 1-1/2 cups sugar
- 1 cup canola oil
- 1/2 cup buttermilk
- 1/3 cup orange juice
- 2 teaspoons grated orange peel
- 1 teaspoon orange extract
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 3/4 cup butter, softened
- 1 cup confectioners' sugar
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon orange extract
- 1 jar (7 ounces) marshmallow creme
- 2 cups vanilla ice cream

- 1/4 cup sugar
- 2/3 cup milk
- 1 egg
- 2 tablespoons canola oil
- 1 teaspoon vanilla
- 1 cup semisweet chocolate chips (6 oz)
- 1 tablespoon coconut oil
- Ice cream
- Toppings such as candy sprinkles or chopped nuts
Cilantro Lime Chicken w/ Corn and Black Beans

Place all ingredients in a resealable gallon-sized freezer bag
- 1 1/2 pounds chicken breasts
- Juice from 2 limes
- 1 bunch fresh cilantro, chopped
- 1 (16 oz) bag frozen corn
- 2 minced garlic cloves
- 1/2 red onion, chopped
- 1 can black beans, drained and rinsed
- 1 tsp cumin
- salt and pepper to taste
