Garlic Chicken (Hawaii Style)

Dipping Sauce: Mix sauce ingredients & bring to a boil
- Dipping Sauce:
- 1 c. shoyu (soy sauce)
- 1 c. sugar
- 3/4 c. water
- 2 tsp. ginger, minced
- 4 Tbsp. garlic, minced
- .................................
- 5 lbs. chicken thighs, cut to bite size pieces
- pepper and garlic salt to your preference and taste
- 1 c. flour
- 1/2 c. cornstarch
- vegetable oil (About 1" oil in frying pan)
Golden Stuffed Mushrooms

Preheat oven to 375 degrees F
- 1 pound large fresh mushrooms
- 2 tablespoons butter
- 1/4 cup corn bread stuffing
- 1/4 teaspoon onion powder
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon paprika

In a small bowl, combine the flour, sugar, baking powder, baking soda and salt
- 1-1/2 cups all-purpose flour
- 3 tablespoons sugar
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 1 cup part-skim ricotta cheese
- 3/4 cup 2% milk
- 1/2 cup orange juice
- 1/4 cup butter, melted
- 1/2 teaspoon grated orange peel
- 1/2 teaspoon vanilla extract
- Maple syrup and confectioners' sugar
Sweetheart Chocolate Cupcakes

1. Heat oven to 350°F. Line about 30 muffin cups (2-1/2 inch in diameter) with paper or foil baking cups
- 2 cups sugar
- 1-3/4 cups all-purpose flour
- 3/4 cup Cocoa
- 1-1/2 teaspoons baking powder
- 1-1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- Vanilla frosting (homemade or ready-to-spread)
- Few drops red food color (optional)
- 1/4 cup chopped maraschino cherries (optional)
- Decorative themed candies, colored sprinkles or sugars (optional)

Red, White, and Blue Poke Cake

Prepare the cake according to the directions on the box
- 1 box chocolate cake mix + the ingredients on the back of the box.
- 1 can (14 ounces) sweetened condensed milk
- 1 cup strawberry pie filling
- 1 cup blueberry pie filling
- 1 container (8 ounces) Cool Whip

BBQ Pulled-Pork Fajitas

Heat oil in a large skillet over medium heat
- 1 T. oil
- 2-1/2 lbs. cooked pork roast, shredded
- 1 onion, thinly sliced
- 2 c. barbecue sauce
- 3/4 c. chunky salsa
- 1 T. chili powder
- 1 t. ground cumin
- 16-oz. pkg. frozen stir-fry peppers and onions
- 1/2 t. salt
- 18 8 to 10-inch flour tortillas, warmed
- Garnish: shredded Pepper Jack cheese, guacamole
Summertime Strawberry Pie

Reserve half of the biggest strawberries, set aside
- 1 qt. strawberries, hulled and divided
- 1 c. sugar
- 3 T. cornstarch
- 3-oz. pkg. cream cheese, softened
- 9-inch pie crust, baked
- Garnish: whipped cream
Cheesy Potato Soup

One cup fat-free half-and-half or milk can be substituted for the half-and-half
- 4 slices bacon
- 1 1/2 cups chopped onion
- 5 cups diced peeled russet potatoes (about 5 medium)
- 1 medium stalk celery, chopped (1/2 cup)
- 1 carton (32 oz) chicken broth (4 cups)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup all-purpose flour
- 1 1/2 cups half-and-half
- 1 bag (8 oz) shredded American and Cheddar cheese blend (2 cups)
Garden Chicken Salad

Combine all ingredients in food processor or blender, pulse until well blended
- 1 cup chopped cooked chicken breast
- 1/4 cup reduced-fat mayonnaise
- 1/2 cup sliced celery
- 1/4 cup coarsely chopped red bell pepper
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Peanut Butter Waffle Toast

1 Heat waffle iron; grease with shortening if necessary (or spray with cooking spray before heating)
- 1 1/4 cups milk
- 1 cup Original Bisquick® mix
- 1/2 cup peanut butter
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla
- 1 egg
- 6 to 8 slices bread
- 6 to 8 tablespoons miniature semisweet chocolate chips
- Powdered sugar, if desired
