Chocolate Lover's Mousse for Two

1. Stir together sugar and gelatin in small saucepan; stir in milk
- 2 tablespoons sugar
- 1/2 teaspoon unflavored gelatin
- 1/4 cup milk
- 1/2 cup HERSHEY'S Mini Chips Semi-Sweet Chocolate
- 1 teaspoon vanilla extract
- 1/2 cup cold whipping cream
- Additional whipped cream
- Sweetened whipped cream (optional)
Chicken Penne Casserole

In a large saucepan, saute the chicken, onion, peppers and seasonings in oil until chicken is no longer pink
- 1 pound boneless skinless chicken thighs, cut into 1-inch pieces
- 1/2 cup each chopped onion, green pepper and sweet red pepper
- 1 teaspoon each dried basil, oregano and parsley flakes
- 1/2 teaspoon salt
- 1/2 teaspoon crushed red pepper flakes
- 1 tablespoon canola oil
- 3 garlic cloves, minced
- 1-1/2 cups uncooked penne pasta
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 3 tablespoons tomato paste
- 3/4 cup chicken broth
- 2 cups (8 ounces) shredded part-skim mozzarella cheese
- 1/2 cup grated Romano cheese
Red Velvet Cheesecake Cookies

In your stand mixers bowl combine the box of red velvet cake mix and flour

- 2 Tbsp Flour
- 2 Eggs
- 1/2 Cup Canola Oil
- 2 Tsp Vanilla Extract
- 4 oz Cream Cheese - Softened
- 2 Cups Powdered Sugar
- 1 Cup White Chocolate Chips
Mom's Potato Salad

Boil whole potatoes for about 25 minutes, or until tender
- 8-9 medium-sized red potatoes
- 1 small onion, chopped finely
- 4 hard boiled eggs, chopped finely
- Desired amount of Miracle Whip (I used 1-1/2 cups)
- Desired amount of yellow mustard (I used 2 Tablespoons)

In a large bowl, combine cucumbers, onion, and salt; mix well then let stand for 1 hour

- 4 medium-sized ripe tomatoes, cut into large chunks
- 1 pound fresh mozzarella cheese, cut into 1-inch chunks

- 1/4 cup balsamic vinegar
- 2 tablespoons chopped fresh basil
- 1/2 teaspoon salt
