- 2/3 cup white cooking wine, or dry white wine

- 1 tbsp. chopped fresh parsley

Bring a large pot of lightly salted water to a boil
- 12 oz. egg noodles (whole wheat if you can find them)
- 2 tbsp. olive oil, plus 2 tsp. for noodles if desired
- 1.25 pounds ground turkey or beef (a pound is fine, but I usually find turkey in 20 oz. packages)
- 2 tsp. reduced-sodium soy sauce
- 1 tsp. worcestershire sauce
- 1/2 tsp. dried oregano
- 8 oz. mushrooms, sliced
- 2 tbsp. flour
- 1/2 c. chicken broth (plus up to 1/2 c. more if needed)
- 1/2 c. milk
- 1/2 c. Greek yogurt (I used 2% fat yogurt)
- freshly ground black pepper and kosher salt, to taste

- 8 cubes beef bouillon, crumbled
- 2 large yellow onions, quartered and sliced
- 1 teaspoon salt
- 1/2 teaspoon coarsely ground black pepper
- 3/4 cup all-purpose flour
- 1/2 cup cold water
- 1 cup heavy cream
- 1 1/2 cups shredded Colby-Monterey Jack cheese
