Weight Watcher's Cheddar Chicken Bacon Ranch Pasta (GOOD)*

1. Cook pasta according to package directions in boiling salted water; drain, return to pot, and keep warm
- 1/2 lb whole wheat penne pasta
- 4 slices bacon, diced (we use turkey bacon)
- 1 large chicken breast, boneless & skinless, cut into bite sized pieces
- 2 Tbsp all purpose flour
- 1/2 pkg ranch dressing mix (1/2 oz)
- 2 cups fat free milk
- 1/2 cup fat free shredded cheddar cheese
- salt & pepper to taste
Lamb Chops with Mashed Peas and Mascarpone

Rub the lamb with fennel, salt and pepper
- 4 leg of lamb steaks, 1 1/4-inches thick
- 2 teaspoons fennel seed
- Kosher salt and black pepper
- 2 tablespoons olive oil, divided
- 2 cloves crushed garlic
- 5 tablespoons butter, divided
- 2 tablespoons thyme, chopped
- 3 to 4 shallots, finely chopped
- 3 cups shelled fresh peas
- 1/2 cup chicken stock
- 1/4 cup tarragon, chopped
- 1/4 cup mint, chopped
- 1/3 to 1/2 cup mascarpone cheese
- Good quality herb or rosemary potato chips
Oba's Shoyu Chicken

Put the shoyu, water, garlic, onion, and sugar in a large pot
- 12 thighs of chicken (the thighs work best)
- 2 cup Kikomans shoyu (soy sauce)
- 2 cup water
- 1 clove garlic
- 1 small onion (or half of a big one)
- 1 cup sugar (you may want more)

Preheat oven to 375 f. Grease and flour 2 (9 in) round cake pans
- 3/4 cup shortening
- 1-1/2 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup mashed bananas
- 2 cups sifted flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup buttermilk
- 1/2 cup chopped pecans
- 1/2 cup flaked coconut
- Creamy nut filling;
- 1/2 cup sugar
- 2 tablespoons all purpose flour
- 1/2 cup half and half
- 2 tablespoons butter
- 1/2 c chopped pecans
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract

- 1 teaspoon salt
- 1 teaspoon chili powder
- 1/2 teaspoon cornstarch
- 1/8 teaspoon crushed dried red pepper

- 1/4 teaspoon dried oregano leaves
- 1/2 teaspoon ground cumin
