Spoon an equal amount of refried beans down center of each tortilla
- 1 can (16 oz each) Refried Beans, heated
- 4 flour tortillas (10 inch), warmed
- 2 cups chopped cooked chicken, warmed
- 1-1/3 cups shredded Chihuahua or Monterey Jack cheese
- 1 cup shredded lettuce
- 1 cup chopped tomatoes
- 1/2 cup guacamole
Thai Chicken Pizza

Place crust on an ungreased 12-in
- 1 prebaked 12-inch pizza crust
- 1 tablespoon Pure Olive Oil
- 4 ounces ready-to-serve roasted chicken breast strips
- 2 to 3 large fresh mushrooms, thinly sliced
- 1/4 cup plus 2 tablespoons Thai peanut sauce, divided
- 2 cups (8 ounces) shredded part-skim mozzarella cheese, divided
- 1/4 cup thinly sliced red onion
- 1/2 cup fresh snow peas, halved
- 1/4 cup chopped sweet red pepper
- 1/4 cup julienned carrot
- 2 green onions, sliced
- 1/2 cup salted peanuts
Country Club Fruit Salad

In a medium bowl, combine yogurt, honey, orange juice, orange peel, and salt; mix well and set aside
- 1 (8-ounce) container low-fat vanilla yogurt
- 1/2 cup honey
- 1/4 cup orange juice
- 1/4 teaspoon grated orange peel
- 1/4 teaspoon salt
- 1 cantaloupe, peeled and cut into chunks

Preheat oven to 450°F. Mix flour, baking powder, salt, sugar, and cream of tartar in a medium bowl

- 2 teaspoons sugar

- 1/2 cup vegetable shortening
- 2/3 cup whole milk
- 1/4 cup butter, melted

Chicken Adobo

Cut chicken into 1 to 2 inch pieces and place in pot with a little oil
- 1 1/2 pounds chicken thighs or breast, skin on, bone-in
- 1/2 cup vinegar
- 1/4 cup water
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1/2 teaspoon peppercorns
- 1 bay leaf
- 2 pounds pork belly
- 1 cup soy sauce
- 2 tablespoons garlic, minced
- 1 cup water
- 1 tablespoon peppercorns
- 5 bay leaves
- 4 tablespoons vinegar
- Salt to taste
Chicken Crunch - Stuffing Coated Chicken

Mix 1/3 cup soup, 1/4 cup milk, onion and parsley
- 1 can mushroom soup
- 3/4 c. milk
- 1 Tbsp. onion, chopped
- 1 Tbsp. parsley (optional)
- 3 large chicken breasts or 6 chicken thighs
- 1 c. seasoned stuffing mix

Reuben Casserole

Preheat oven to 350 degrees F
- 1 (32-ounce) jar sauerkraut, drained
- 1 onion, finely chopped
- 1 1/4 cups sour cream
- 1/4 teaspoon garlic powder
- 4 (2.5-ounce) packages thinly sliced corned beef, cut into thin strips
- 2 1/2 cups (10 ounces) shredded Swiss cheese
- 8 slices rye bread
- 2 tablespoons butter, melted
Double-Chocolate Chunk-Peanut Butter Bars

- 1/4 cup vegetable oil
- 2 tablespoons water
- 1 egg
- 1 pouch (7.5 oz; snack size) Betty Crocker™ peanut butter cookie mix
- 2 tablespoons vegetable oil
- 1 tablespoon water
- 1/4 cup dark chocolate chunks, if desired
Hobo Dinner

In a bowl, combine beef, Worcestershire sauce, pepper and garlic powder; form into 4 to 6 patties
- 1-1/2 lbs. ground beef
- 1 t. Worcestershire sauce
- 1/2 t. seasoned pepper
- 1/8 t. garlic powder
- 3 redskin potatoes, sliced
- 1 onion, sliced
- 3 carrots, peeled and sliced
- olive oil and dried parsley to taste
Homemade Wheat Thins

- 1 1/4 cups whole wheat flour
- 1 1/2 tablespoons sugar
- 1/2 teaspoon salt, plus extra for topping
- 1/4 teaspoon paprika
- 4 tablespoons unsalted butter
- 1/4 cup water (you might need to add a little more)
- 1/4 teaspoon vanilla
