Eggnog Cheesecake

Combine wafer and melted butter
- 1 1/4 C vanilla wafers, finely crushed
- 3 T butter, melted
- 1/3 C sugar
- 1 enveloge unflavored gelatin
- 1 C eggnog
- 4 egg yolks, beaten
- 1/4 t ground nutmeg
- 2 (8 oz) pkgs. cream cheese, beat until softened
- 2 T rum or milk
- 4 egg whites
- 1/2 C sugar
- 1/2 C whipping cream
Rum Raisin Bread Pudding

Heat oven to 375 degrees. Butter a shallow 2 to 2 1/2 qt (or 8" square or 11 x 7" rectangular) baking dish
- Butter for the pan
- 1 medium orange
- 1/2 c spiced rum
- 1 1/2 c raisins
- 6 large eggs
- 2 c whole milk
- 1 c heavy cream
- 1 c sugar
- 2 t pure vanilla extract
- 1/2 t kosher salt
- 1/4 t ground cinnamon
- 1/4 t ground nutmeg
- 1 lb egg bread such as brioche or challah, cut into 1 1/2" pieces
Bread, Caramelized Onion Cheese

375 deg. Melt 2 T butter; add onions and cook about 4 mins
- 4 T butter, room temp
- 1 pkg. (10 oz.) frozen chopped onions
- 1 c finely shredded cheddar cheese
- 2 T chopped parsley
- 1 pkg hot roll mix
- 1 c hot water
- 2 eggs
- 1 1/2 t cracked papper
- 3/4 t poppy seeds

Prepare your favorite sauce in large pot
- 8 c spaghetti sauce
- 3 lbs. roast beef, eye round
- 1 loaf Italian bread or 12 rolls
- 1 t salt
- 3/4 t black pepper
- Locatelli or parmesan cheese
Chocolate Zucchini Cake

Generously grease and flour a 10" Bundt pan
- 2 c flour
- 1 t baking powder
- 1 t baking soda
- 1/4 t salt
- 1 t cinnamon
- 1/4 c unsweetened cocoa
- 3 eggs
- 1 1/2 c granulate sugar
- 1/2 c vegetable oil
- 3/4 c buttermilk
- 1/2 lb raw zucchini, shredded
- 1 t vanilla extract
- 1 c coarsely chopped pecans
- confectioners' sugar

In large pot, cook onions, celery, mushrooms and garlic in butter or oil until onions are golden
- 2 med onions, cut into wedges
- 2 stalks celery, chopped
- 2 c sliced fresh mushrooms
- 2 T butter or olive oil
- 3-4 cloves minced garlic
- 1 1/2 lbs. leftover roast beef
- 64 oz. beef broth
- 1 T worcestershire sauce
- salt & pepper
- egg noodles

- 1 (8 oz.) package cream cheese
- 1/4 c sour cream
- 1/2 c cilantro, chopped
- 1 fresh jalapeno pepper, minced
- 2 T lemon juice or juice of 1/2 large lemon
- 1/2 t cayenne pepper
- salt and pepper, to taste
