Potatoes, Rosemary Roasted

Preheat oven to 425. Combine oil, potatoes, butter, garlic, salt, rosemary and pepper
- 2 lbs. small red potatoes
- 1 T olive oil
- 1 T butter, melted
- 2 garlic cloves, minced
- 1 1/4 t salt
- 3/4 t cracked pepper
- 1 t dried rosemary, crushed
- 2 T chopped fresh parsley
- Fresh rosemary sprig
Mushroom Canapes

In a bowl, stir together the mayonnaise, Parmesan, mushrooms, and onion rings
- 1/2 cup mayonnaise
- 1/4 cup freshly grated Parmesan
- 2-ounces canned mushroom pieces and stems, drained
- 1/2 of a 2.8-ounce can french-fried onion rings
- 1 loaf (8-ounce) party rye or pumpernickel bread (we used pumpernickel)
Veal Marsala

Place each veal cutlet between two sheets of waxed paper
- 1 lb. veal cutlets
- 1 T olive or vegetable oil
- 1/2 c chopped onion
- 1 T finely chopped parsley
- 1/8 t pepper
- 1/4 c marsala wine
- 2 T butter
- 1/2 lb. sliced mushrooms
- 1 clove garlic, minced
- 1/4 t salt
- 1/4 c beef broth
Tuna Grill

Place fish in a deep platter
- 2 lbs. fresh tuna steaks
- 1/8 cup orange juice
- 1/4 cup soy sauce
- 2 Tbsp chili sauce
- 1 lime & juice
- 1 Tbsp lemon juice
- 4 Tbsp melted butter
- 1/2 tsp pepper
- 1/2 tsp oregano
- 1 minced garlic clove
- 2 Tbsp sliced onion
Fruit & Nut Loaf

Preheat oven to 300 deg. Butter or spray 9x5 loaf pan
- 3/4 c flour
- 1/4 t baking soda
- 1/4 t baking powder
- 1/2 t salt
- 3/4 c firmly packed light brown sugar
- 3 c coarsely chopped walnuts, pecans, hazelnuts, or almonds
- 2 c dates & figs
- 1/2 c dried fruits (apricot, apples, etc.)
- 3 large eggs
- 1 t vanilla
Hot Potato Salad

Cook potatoes, cool and slice thinly into baking dish
- 6 medium sized potatoes
- 1/4 c finely chopped celery
- 1/4 c finely chopped parsley
- 2 T tarragon vinegar
- 1 slice lemon
- 4 T olive oil
- salt & pepper to taste
Simple Baked Brisket

Preheat oven to 450 deg. Line a baking pan with foil
- 1/2 sweet onion, sliced thin
- 1/2 c red wine
- Kosher salt and freshly ground pepper
- 3 to 4 pounds flat-cut beef brisket, fat-cap on
- 1 packet dry onion soup mix
Beer Brats

In large heavy-bottomed pot, combine bratwurst and beer
- 2 packages Johnsonville original bratwurst
- 2 can stout beer, Guinness
- 10 buns
- Sauerkraut
- Dijon mustard
Rosemary Beef with Roasted Tomatoes & Potatoes

- 1 1/2 lb baby red potatoes, quartered
- 1 pint grape tomatoes
- 1/4 cup olive oil
- Kosher salt and pepper
- 1 3 lb beef roast, such as rib, rump or sirloin tip
- 4 cloves garlic, finely chopped
- 1 Tbsp chopped fresh rosemary
