Beer Braised Beef with Onions

Ingredients

  • 3 lbs onions
  • 5 lb chuck roast tied
  • 2 T vegetable oil
  • 2 Bay leaves
  • 2 12 oz cans of pilsner or budweiser beer
  • 2 T red wine vinegar.
  • Salt and pepper

Preparation

Step 1

Heat oven to 350.

In a dutch oven or large skillet cook onions in oil for 25 minutes until caramelized. Set aside. Brown beef. Return onions to pan add bay leaf and beer, salt and pepper. Set in the oven covered for 3 to 3 1/2 hours. It should almost fall apart when pierced with a fork.

Serve with mashed potatoes or polenta.
