Hash Brown Breakfast Casserole

Preheat the oven to 350°
- 3 Tbsp. butter
- 1 small yellow onion , chopped
- 4 cups frozen shredded hash browns
- 1 pound breakfast sausage, mild or hot
- 2 1/4 cups whole milk
- 8 large eggs
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/4 tsp. freshly ground nutmeg
- 1 tsp dry mustard
- 8 cups cubed French or Italian bread , crusts removed
- 2 cups (1/2 pound) grated cheddar cheese
- 2 cups (1/2 pound) freshly grated Parmesan

- DOUGH:
- 4 cups flour
- 4 large eggs
- 1 teaspoon salt
- 3 tablespoons olive oil
- Water
- FILLING:
- 4 cups Genoa Salami, cut into 1/4-inch x 1/2-inch pieces (about 1 1/2-pounds)
- 4 cups sharp provolone, cut into 1/4-inch x 1/2-inch pieces (about 1 1/4-pounds)
- 12 hard cooked eggs, cut in quarters and then cut in half
- 6 cups mini meatballs, (1 Esposito meatball recipe- make into 98 small)
- 8 cups Marinara plus more for serving
- 3 pounds ziti, cooked very al dente (about half the time on package) Drain and stir in some olive oil
- 2 tablespoons olive oil
- 1 cup Romano, finely grated
- 6 large eggs, beaten

Put basil, broth & pine nuts in processor - add oil
- 1 cup fresh basil, firmly packed
- 1/2 cup chicken broth
- 1/3 cup pine nuts (lightly toasted)
- 1/3 cup fresh parmesan
- 1/4 cup olive oil
Pan Roasted Ribeye with Creamed Swiss Chard

Preheat oven to 350 degrees F
- Bread crumb topping:
- 2 large (16 to 18-ounce) bone-in rib-eye steaks
- 1 sprigs fresh rosemary
- 4 sprigs fresh thyme
- Extra-virgin olive oil
- Kosher salt and freshly cracked black pepper
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon butter
- 2 to 3 garlic cloves, thinly sliced
- 2 sprigs fresh thyme, leaves removed
- 2 sprig fresh rosemary, leaves removed
- 1 About 1 cup panko bread crumbs
- Salt and freshly cracked black pepper
- Creamed rainbow chard:
- 1 large bunch Swiss chard, leafs removed from the stem and leaves chopped OR fresh spinach
- 2 cups heavy cream
- 2 fresh bay leaves
- 2 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 2 to 3 cloves garlic, peeled
- Freshly grated Parmesan, to taste
- Salt and freshly cracked black pepper
- 1 lemon, juiced
Espo Pasta & Bean Soup

Simmer garlic and celery in olive oil
- 3-4 cloves garlic, minced
- 2 T. olive oil
- 3 stalks celery, chopped
- 6 cups chicken broth
- 1/2 lb fresh spinach
- 1 can stewed tomatoes
- 2 cans Northern beans, rinsed
- fresh parsley, chopped
- salt & pepper
- 1/2 tsp red pepper
- 1/2 tsp basil
- 1 cup Ditalini or small pasta, cooked and tossed with olive oil
- parmesan cheese
Shrimp Sandwiches

Delicious...don't skip the fresh tarragon, it makes it!
- Mayo:
- 1 lb shrimp, cooked and cut into bite sized pieces
- croissants
- tomatoes
- lettuce
- avocado slices
- 1/3 cup mayo
- 2 T. capers, finely chopped
- 1 1/2 T. onion, grated
- 1 T. fresh tarragon, chopped
- 1/4 tsp. celery seed
- 1/4 tsp. Tabasco
- 1/2 c. celery, finely chopped
Pizza - Caramelized Onion, Sausage and Basil

Saute onions in 3 T. olive oil, add salt and pepper
- Pizza dough
- 3 T. olive oil, plus more for drizzling
- 1 T. butter, at room temp
- 2 large onions, thinly sliced
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 lb spice Italian sausage
- 3/4 c. crumbled gorgonzola or blue cheese
- 1/4 c. fresh basil leaves, chopped
Strawberry Pretzel Salad

Combine butter, brown sugar and pretzels
- 3/4 cup butter
- 3 T. brown sugar
- 2 1/2 cup crushed pretzels
- 1 - 6 oz strawberry jello
- 2 cups boiling water
- 3 cups chilled strawberries,
- 1 - 8 oz cream cheese, room temp
- 1 scant cup sugar
- 1 - 8 oz Cool Whip
Chipotle Marinade

- 2 cans of chipotle chiles in adobo
- 3 tablespoons tequila or vodka
- 2 tablespoons fresh lime juice
- 1 tablespoon ketchup
- 1 tablespoon adobo sauce, from chipotle can
- 1 clove garlic, chopped
- 2 teaspoons packed light brown sugar
- 1/4 teaspoon salt
- 1 tablespoon olive oil
Flank Steak with Black Beans and Corn

- For the black bean, corn and tomatoes:
- 1 1/2 lb flank steak
- 1/2 tsp cumin
- 2 garlic cloves, crushed
- 1/2 tsp kosher salt
- fresh cracked pepper to taste
- 3 tbsp red onion, minced
- 1 tsp olive oil
- 1/4 cup fresh squeezed lime juice
- 2 medium vine ripe tomatoes, diced
- 1 cup canned black beans, drained and rinsed
- 1 cups frozen corn kernels (fresh is fine)
- 2 tbsp finely minced cilantro
- kosher salt and fresh pepper to taste
