Chicken Saltimbocca

Preheat oven to 375 degrees F
- 2 tablespoons olive oil
- 8 thin slices pancetta
- 4 6 ounces skinless, boneless chicken breast halves, pounded to 1/2-inch thickness
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh marjoram or oregano leaves
- 1 bulb fennel, trimmed, halved, cored, and thinly sliced
- 1 small red onion, thinly sliced
Beef Stew in Red Wine Sauce

Preheat the oven to 350°
- 1 tablespoon unsalted butter
- 2 tablespoons olive oil
- 2 pounds trimmed beef flatiron steak or chuck, cut into 8 pieces
- Salt
- Freshly ground black pepper
- 1 cup finely chopped onion
- 1 tablespoon finely chopped garlic
- 1 tablespoon all-purpose flour
- One 750-milliliter bottle dry red wine
- 2 bay leaves
- 1 thyme sprig
- One 5-ounce piece of pancetta
- 15 pearl or small cipollini onions, peeled
- 15 cremini mushrooms
- 15 baby carrots, peeled
- Sugar
- Chopped fresh parsley, for garnish
Gluten Free Chicken Fingers

To a shallow dish, add 1/2 cup almond flour
- 1/2 cup almond flour
- 3 eggs
- 1 1/2 cups old-fashioned rolled oats
- 1 1/2 tsp each salt and onion powder
- 3/4 tsp each garlic powder, dried thyme and freshly ground black pepper
- 1 lb boneless, skinless chicken breasts
- 2 cups canola oil.
- 1/4 cup each apricot preserves and Dijon mustard with 1 tbsp water
Pork Dumplings

Preparation Dough: Place 3 cups flour in a medium bowl
- Filling:
- 1 ¼ lb. ground pork shoulder (Boston butt; 20% fat)
- 3 scallions, finely chopped
- 1 garlic clove, finely grated
- 1 Tbsp. soy sauce
- 1 ¾ tsp. kosher salt
- 1 ¼ tsp. Shaoxing wine (Chinese rice wine)
- 1 ¼ tsp. sugar
- 1 ¼ tsp. toasted sesame oil
- ¾ tsp. finely grated ginger
- ¾ tsp. freshly ground white pepper

- 1 2" piece ginger, peeled, julienned
- ⅓ cup black vinegar
- 2 Tbsp. soy sauce
- Assembly:
- 1 head Napa cabbage

- 1 cup brown sugar, packed
- 1 cup evaporated milk
- 2 cups chopped pecans
- 2 tbsp. margarine
