Pulled Pork

Combine sugar, through dried thyme in a bowl; whisk to combine
- 4 lb. pork loin roast
- 1/2 cup dark brown sugar
- 2 tsp. smoked paprika
- 1 tsp. ground allspice
- 1 tsp. granulated garlic
- 1 tsp. granulated onion
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 3 tbsp. salt
- 2 tbsp. fresh ground pepper
- 2 tsp. dried thyme
- 12 fluid ounces of dark beer
- 1 - 14 oz. bottle of your favorite barbeque sauce
- 1 cup chicken stock
- 1/4 cornstarch
Halibut Baked With Mushrooms

Preheat the oven to 400 degrees F
- 4 medium porcini or portobello mushrooms
- 7 tablespoons -extra--virgin olive oil
- 3 medium onions, thinly sliced
- 6 garlic cloves, peeled and crushed
- 1 teaspoon kosher salt
- 6 skinless halibut fillets, about 2 1/4 pounds total
- Juice of 1 lemon
- 1/2 cup white wine
- 2 tablespoons chopped fresh parsley
Tuscan Vegetable Soup

In a small bowl mash half of the beans with a masher or the back of a spoon, and set aside
- 1 (15-ounce) can low-sodium canellini beans, drained and rinsed
- 1 tablespoon olive oil
- 1/2 large onion, diced (about 1 cup)
- 2 carrots, diced (about 1/2 cup)
- 2 stalks celery, diced, (about 1/2 cup)
- 1 small zucchini, diced (about 1 1/2 cups)
- 1 clove garlic, minced
- 1 tablespoon chopped fresh thyme leaves (or 1 teaspoon dried)
- 2 teaspoons chopped fresh sage leaves (or 1/2 teaspoon dried)
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 32 ounces low-sodium chicken broth or vegetable broth
- 1 (14.5-ounce) can no salt added diced tomatoes
- 2 cups chopped baby spinach leaves
- 1/3 cup freshly grated Parmesan, optional
Roast Pork Loin with Fennel Salad

In a large pot, toast all of the spices over moderately high heat until fragrant, about 1 minute
- Pork:
- 1 tablespoon whole fennel seeds
- 1 tablespoon coriander seeds
- 1 tablespoon cloves
- 1 tablespoon black peppercorns
- 1 tablespoon star anise pods
- 1 tablespoon allspice berries
- 1 tablespoon juniper berries
- 1 gallon water
- 1 cup kosher salt
- 1/2 cup light brown sugar
- 4 bay leaves
- One 10-rib, bone-in pork loin roast (about 7 pounds)
- Fennel Salad:
- 1 large red grapefruit
- 1/3 cup fresh orange juice
- 2 tablespoons red wine vinegar
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon honey
- Salt and freshly ground pepper
- 2 large fennel bulbs, cored and very thinly sliced on a mandoline
- 1 small red onion, thinly sliced
Jalapeno Salt

Grind the fresh jalapeno in a spice grinder or food processor
- 1 jalapeno
- 1 cup salt
Pork Seasoning Rub

Combine all ingredients in a bowl until well mixed
- 1 tablespoon kosher salt
- 1 teaspoon ground allspice
- 1 teaspoon brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried, crushed Scotch bonnet pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried chives
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon dried thyme
Chinese Seafood Soup

- 1 tsp oil
- 3 cloves garlic; chopped
- 4 cups chicken stock
- 6 oz. shrimp
- 6 oz. bag of sea scallops
- 3 tbsp. soy sauce
- 2 tbsp. vinegar
- 1/2 lb. linguine
- 2 scallions, trimmed & chopped
Oatmeal Cookies (pudding in the mix)

- 1 1/4 cups unsifted flour
- 1 tsp. baking soda
- 1 cup marg
- 1/4 cup sugar
- 3/4 brown sugar
- 1 pkg. instant vanilla pudding
- 2 eggs
- 3 1/2 cups quick-cooking rolled oats
- 1 cup raisins
