Seven Layer Salad

Layer in the order from top down, in a glass bowl
- 1 bag spinach
- 1 head of lettuce
- 1/2 cup red onion, chopped
- 1 pack frozen peas
- 8 oz. mayonnaise
- 8 oz. miracle whip
- 2 TBSP sugar
- 4 hard boiled eggs, chopped
- 1 jar Bacos
Squash Casserole

Cook squash and onion in boiling water until soft
- 2 cups squash or zucchini, sliced thin
- 1 small onion, chopped fine
- 3 tablespoons butter, melted
- 1 cup milk, warmed
- 1 cup dry bread crumbs
- 2 eggs, beaten
- 1 cup grated sharp cheddar cheese
- 14 saltine crackers, crushed
Pan-Grilled Flank Steak with Soy-Mustard Sauce

1. Heat a grill pan over high heat
- 1 pound flank steak, trimmed
- 3/8 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- Cooking spray
- 1 teaspoon canola oil
- 1 1/2 teaspoons minced fresh garlic
- 2 tablespoons lower-sodium soy sauce
- 1 teaspoon Dijon mustard
- 3/4 teaspoon sugar
- 1 1/2 tablespoons heavy whipping cream
- 2 tablespoons chopped fresh cilantro, divided

Flank Steaks

I think I will not use the tomatoes
- 1 TBSP olive oil
- 1 lb flank steak, trimmed
- 1/2 tsp of each salt and pepper
- 3 cloves of garlic, thinly sliced
- 1 shallot thinly sliced
- 1/4 cup balsamic vinegar
- 2 cups cherry tomatoes, quartered
- 1/3 cup basil, divided
- 1/3 cup green onions, thinly sliced
Lemon Reggiano Fried Chicken

Heat olive oil and canola into a large fry pan ( about 1/2 cup each) till hot
- 4 boneless chicken breasts thinly sliced (Preferably Marinated overnight in 1/4 cup Lemon Juice, 2 tbsp. olive oil and 2 garlic cloves minced)
- 1 cup of Italian flavored panko bread crumbs plus 1 cup of regular Italian flavored bread crumbs, 1/2 cup parmesan reggiano cheese mixed together
- 1 cup of milk or egg whites
- canola oil and olive oil for frying 60/40 split
- Lemon Sauce (the secret ingredients!)
- 1/4 cup of parmigiano reggiano cheese
- 2 1/2 tablespoons of freshly grated lemon rind
- 2 tablespoons of extra virgin olive oil
- 1/2 teaspoon each oregano, garlic powder, black pepper and salt (Optional)
- pinch of fresh rosemary
- 4 teaspoons lemon juice
- mix all above ingredients together set aside.

Mozzarella Chicken Sandwich

Combine pesto and mayonnaise in a small bowl, stirring to blend
- 1/4 cup (about 2 ounces) sun-dried tomato pesto (such as Classico)
- 2 tablespoons fat-free mayonnaise
- 3/4 pound skinless, boneless chicken breasts
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 1 teaspoon olive oil
- 1 (8-ounce) loaf ciabatta
- 12 large basil leaves
- 3/4 cup (3 ounces) shredded part-skim mozzarella cheese
- 1/2 cup sliced bottled roasted red bell peppers
- 1 large tomato, thinly sliced

Grilled Lime Chicken Tacos

1.Soak chiles in hot water and cover for 15 minutes
- 4 dried chilies, stemmed and seeded
- 3 TBSP lime juice
- 1 jalapeño pepper, coarsely chopped
- 2-3 cloves garlic, chopped
- 4 limes, cut in 1/4 slices
- 5 boneless, skinless breasts
- 8 corn tortillas, warmed
- pineapple salsa
- cilantro
Pesto Sauce

- 1/2 cup Parmesan cheese
- 3 medium garlic cloves
- 2 cups basil
- 3 TBSP pine nuts
