Buffalo Chicken Dippers

Soak skewers in water for 15 minutes

- Vegetable oil spray
- 1 TBSP cornstarch

Chicken Salad Melts

Preheat oven to 450. Combine the first 7 ingredients in a bowl and stir well
- 2 cups shredded rotisserie chicken
- 1/4 cup plain greek yogurt
- 1/4 cup canola mayonnaise or regular mayonnaise
- 2 tsp fresh dill
- 1/4 tsp salt
- 1/4 tsp pepper
- 3 green onions sliced
- whole wheat English muffins, split and toasted
- 3 oz. sharp shredded cheddar cheese about 3/4 cup
- 3/4 cup thinly sliced apples

Cheesecake Factory Sundried Tomato Fettuccine

Serves 4 Prep 20 minutes Cook time 15 minutes
- 1 lb fettuccine
- 1 cup reserved pasta water
- 4 TBSP olive oil
- 5 cloves garlic
- 13/4 cup sundried tomatoes
- 1 (14 oz) can of petite diced tomatoes, drained
- 3 TBSP tomato paste
- 1/2 TBSP sugar
- 1/2 cup plain greek yogurt
- 1/4 cup sour cream
- 1 1/2 cups baby spinach
- Crushed red pepper flakes, salt and pepper
Grilled Zucchini Pizza Slices

Oil the grill grates (I use a bit of oil on a paper towel), then preheat grill to medium-high
- large zucchini slices, cut 3/4 inch thick (see recipe notes)
- olive oil, for lightly brushing both sides of pizza and oiling grill grate
- pizza sauce of your choice (I used canned red sauce, but you could also use Basil Pesto or white sauce. Extra sauce can be frozen for later. Choose sauce with the lowest grams of sugar for the South Beach Diet.)
- grated cheese (I used a blend of low-fat cheese called "pizza cheese," but you can use any cheese you'd enjoy on pizza.
- pizza toppings of your choice (I used low-fat turkey pepperoni, but you can also use sauteed mushrooms, Canadian bacon, cooked sausage, caramelized onions, sliced olives, anchovies, sauteed bell peppers, or any other toppings you'd like on pizza.)
Pork Tenderloin with Mustard Sauce

Cook noodles according to package directions, omitting salt and fat; drain
- 2 cups uncooked medium egg noodles
- 1 tablespoon olive oil
- 1 (1-pound) pork tenderloin, trimmed and cut crosswise into 12 (1-inch-thick) slices

- We only used half of one 2 oz bottle for 2 breasts
- 2 tablespoons extra-virgin olive oil
- 3 tablespoons minced garlic
- 1 cup roughly chopped marinated sun-dried tomatoes
- We substituted red bell peppers
- 1/4 cup white wine
- 3 cups heavy cream
- 3/4 cup grated Parmesan
- 1 teaspoon sea salt
- We just sprinkled some on
- 1 teaspoon freshly ground black pepper

Chicken Parmesan Baked with Croutons

Put garlic, olive oil and pepper flakes on bottom of a lasagna tray

- 2 cloves garlic

- 2-3 cups tomato sauce

- 1 tbsp canola oil
- 1 1/2 cups thinly sliced onion
- 2 garlic cloves, chopped
- 1 green bell pepper, thinly sliced
- 12 oz top round beef, cut into thin strips
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 1 tsp Worcestershire sauce
- 4 oz reduced-fat provolone, cut into thin strips
- 1 whole-wheat baguette, 9 to 10 inches (about 6 oz), split and sliced into 6 portions
