In a large saucepan, cook sugar and water over medium heat until sugar is dissolved
- 1 1/2 cups sugar
- 1 1/2 cups water
- 4 cups fresh or frozen cranberries(1 lb)
- 1 can (14 1/2 oz) pitted tart cherries, drained
CHICKEN = Chicken with Arugula

Pound chicken to about 1/4 inch thick
- 4 chicken cutlets, 4 oz. each
- 2 large eggs
- 2 cups panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tsp. Italian seasoning
- 1/2 tsp. dried basil
- ARUGULA
- 1 1/2 Tbsp. fresh lemon juice
- 1 Tbsp. chopped finely shallots
- 1/2 - 3/4 tsp.# Dijon mustard
- Salt and pepper
- 1/4 cup extra-virgin olive oil
- 4 oz. arugula
- Shaved Parmesan
POTATOES = Sour Cream Potatoes

Place potatoes in saucepan and cover with water
- 10 medium red potatoes, peeled and quartered
- 1 (8 oz) package cream cheese, cubed
- 1 cup (8 oz) sour cream
- 1/4 cup milk
- 2 Tbsp butter, divided
- 1 Tbsp dried parsley flakes
- 1 1/4 tsp garlic salt
- 1/4 tsp paprika
DESSERTS = Rice Krispies

Melt butter. Add marshmallows and stir until completely melted
- 3 Tbsp Butter
- 1 10 oz pkg regular marshmallows or 4 cups miniature marshmallows
- 6 cups rice krispies
- 1 jar(7 oz) marshmallow creme can be substituted
CHICKEN = Stawberry Balsamic Chicken

In a large nonstick skillet, heat oil over medium high heat
- 3 to 4 Tbsp Olive Oil
- 4 boneless skinless chicken breast halves (4 oz each)
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/3 cup finely chopped almonds
- 1/4 cup minced shallots or green onions
- 1/3 cup chicken broth
- 1/3 cup strawberry preserves
- 3 Tbsp balsamic vinegar
- 1 Tbsp chopped fresh rosemary or 1 tsp dried rosemary, crumbled

In a mixing bowl, cream butter and sugar

- 1/2 cup butter, softened
- 2 cups sugar
- 3 eggs
- 1 1/2 cups mashed ripe bananas(about 3 medium)
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- pinch salt
- 1/2 cup butter, softened
- 1 pkg (8 ounces) cream cheese, softened
- 4 cups confectioners sugar
- 2 teaspoons vnailla extract
ITALIAN = Baked Ziti

Preheat oven to 400 degrees
- 1 lb. Italian sausage
- 1/4 cup olive oil
- 1 1/2 cups diced onions
- 1/4 cup chopped fresh garlic
- 2 tsp. dried Italian seasoning
- 1/2 tsp. red pepper flakes
- 2 28 oz each cans crushed tomatoes, Cento
- 8 oz. mascarpone cheese
- Salt and pepper to taste
- 1 lb. ziti, cooked for 8 minutes
- 1 lb. provolone, cut into 1/2 inch cubes
- 1 cup grated Parmesan
HUNGARIAN = Cabbage Kielbasa
