CHICKEN = Stawberry Balsamic Chicken

Ingredients
- 3 to 4 Tbsp Olive Oil
- 4 boneless skinless chicken breast halves (4 oz each)
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/3 cup finely chopped almonds
- 1/4 cup minced shallots or green onions
- 1/3 cup chicken broth
- 1/3 cup strawberry preserves
- 3 Tbsp balsamic vinegar
- 1 Tbsp chopped fresh rosemary or 1 tsp dried rosemary, crumbled

Step 1
In a large nonstick skillet, heat oil over medium high heat. Season chicken with salt and pepper and dredge in almonds. Place chicken in oil, cook 4 minutes on each side or until no longer pink. Remove chicken from pan and keep warm.
Reduce heat to medium. Saute shallots 1 minute. Add chicken broth, preserves, vinegar and rosemary. Simmer, uncovered, until slightly thickened, about 3 minutes. Serve over chicken and rice or spinach. Sprinkle with parsley.
