Ingredients

  • 3 to 4

    Tbsp Olive Oil

  • 4

    boneless skinless chicken breast halves (4 oz each)

  • 1/2

    tsp salt

  • 1/4

    tsp pepper

  • 1/3

    cup finely chopped almonds

  • 1/4

    cup minced shallots or green onions

  • 1/3

    cup chicken broth

  • 1/3

    cup strawberry preserves

  • 3

    Tbsp balsamic vinegar

  • 1

    Tbsp chopped fresh rosemary or 1 tsp dried rosemary, crumbled

Directions

In a large nonstick skillet, heat oil over medium high heat. Season chicken with salt and pepper and dredge in almonds. Place chicken in oil, cook 4 minutes on each side or until no longer pink. Remove chicken from pan and keep warm. Reduce heat to medium. Saute shallots 1 minute. Add chicken broth, preserves, vinegar and rosemary. Simmer, uncovered, until slightly thickened, about 3 minutes. Serve over chicken and rice or spinach. Sprinkle with parsley.
