Classic Chipotle Chicken For Tacos

Directions Add the oil to a ziplock bag
- 4 chicken thighs, boneless and skinless
- 1 Tbs. vegetable oil
- 2 tsp. chili powder
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. cumin powder
- 1/2 tsp. dried oregano
- 1/2 tsp. black pepper
Lasagna-Style Baked Ziti

Heat oven to 400° F. Cook the pasta according to the package directions
- 12 ounces ziti (about 4 cups)
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, finely chopped
- 1/2 pound lean ground beef
- kosher salt and black pepper
- 1 26-ounce jar marinara sauce
- 1 bunch spinach, thick stems removed (about 4 cups)
- 1/2 cup ricotta
- 1/2 cup grated Parmesan (2 ounces)
- 1 cup grated mozzarella (4 ounces)

- 1/3 cup vegetable oil
- 2 large eggs
- 1 cup sugar
- 1 cup pumpkin purée (canned pumpkin)
- 1 teaspoon pumpkin pie spice, or 1/2 teaspoon cinnamon plus 1/4 teaspoon each ground ginger and nutmeg
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 1/4 cups King Arthur Unbleached All-Purpose Flour
- ICING
- 1/2 cup cream cheese
- 3 tablespoons butter
- 1 3/4 cups confectioners' sugar
- 1 teaspoon vanilla extract
- 3 tablespoons finely diced crystallized ginger
