Oatmeal Raisin Cookies

1. Heat oven to 350 degrees
- 1 Cup Butter or Margarine
- 1 Cup Brown Sugar, Packed
- 1 Lg Egg
- 1 Tsp Vanilla
- 1-1/2 Cups Flour
- 1 Tsp Baking Soda
- 1/4 Tsp Salt
- 1-1/4 Cups Rolled Oats
- 1 Cup Raisins
Chewy Snickerdoodle Bars

Preheat oven to 350 degrees F
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup shortening
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon cream of tartar
- 1/2 teaspoon salt
- 1/8 cup granulated sugar
- 1 teaspoon cinnamon
Sausage Bean Chowder (Very Good)

Combine in large pot and simmer 1 hour
- 1 lb hot italian sausage
- 2 14oz cans kidney beans
- 2 15oz cans tomatoes
- 2-3 c tomato juice or vegetable juice
- 1 c whole kernel corn
- 1 lg onion, chopped
- 1 stalk celery, chopped
- 1 green pepper, chopped
- 2 tsp chicken soup powder or 2 bouillon cubes
- 1 bay leaf
- 1/2 tsp garlic powder
- 1 tsp thyme
- 1 tsp chili powder
- 1-1/2 tsp seasoned salt
- 1/4 tsp pepper
Sausage Jambalaya (Very Good)

Heat Dutch oven or large saucepan over medium high heat
- 2 tbsp olive oil, as needed
- 1 onion, diced
- 2 stalks celery, diced
- 1 small green pepper, diced
- 1 small red pepper, diced
- 2 garlic cloves, minced
- 2 to 3 smoked sausages, sliced
- 2 to 3 sprigs thyme
- 2 bay leaves
- 2 tsp Cajun seasoning, to taste
- Coarse salt and freshly cracked black pepper, to taste
- 1-1/4 cup basmati rice, rinsed well in warm water
- 3/4 cup diced tomatoes
- 1-1/2 to 1-3/4 cups chicken stock
- Handful chopped fresh parsley
- Hot sauce, for serving
Oatmeal Smoothie

Very Good
- 1 Cup Milk (I use Soy or Almond milk)
- 1/3 Cup Old Fashioned Oats
- 1 Medium Frozen Banana, Sliced
- 1 Tablespoon Peanut Butter
Jean's Banana Muffins

Put dry ingredients in a bowl together and mix
- 1 c. sugar
- 2 tsp. baking soda dissolved in 1 c. mayo
- 2 c. flour
- 1 c. mashed bananas
- 1/4 tsp. baking powder
Garlic Chicken

Season chicken with salt and pepper
- 2 (4 ounce) skinless, boneless chicken
- breast halves
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 10 cloves garlic, peeled
- 1 1/2 teaspoons canola oil or vegetable
- oil
- 5 tablespoons chicken broth, divided
- 1/4 cup dry white wine, or chicken broth
- 1 teaspoon lemon juice
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 1 1/2 teaspoons cornstarch
Peanut Noodles

Cook pasta in a large pot of boiling water until done
- 8 ounces spaghetti
- 1 bunch green onions, sliced (white parts only)
- 2 tablespoons sesame oil
- 1 teaspoon minced fresh ginger root
- 1/3 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup hot water
- 1 tablespoon cider vinegar
- 1 teaspoon white sugar
- 1/4 teaspoon crushed red pepper flakes
Japanese Chicken Wings

Cut wings in half, remove tips Dip in egg, then flour
- Sauce:
- 3 lbs chicken wings
- 1 beaten egg
- 1 c flour
- 1 c butter
- 3 tbsp soya sauce
- 3 tbsp water
- 1 c white sugar
- 1/2 cup vinegar
- 1 tsp seasoning salt

- Burger:
- 3 pounds ground lean beef
- 1/4 cup chopped onions
- 2 cups chopped breakfast bacon
- 2 cup diced aged cheddar
- 4 tbsp hoisin sauce
- 1 tbsp Worcestershire sauce
- 2 whole eggs
- 1/2 cup breadcrumbs
- 2 tbsp finely chopped garlic
- 1/2 cup finely chopped herbs (tarragon, parsley and chives)
- 3 tsp salt
- 3 tsp ground white pepper
- Garnish:
- 8 burger buns
- 16 slices of tomato
- 16 leaves of watercress
- 8 slices red onion
- 4 tbsp grape mustard
- Glaze:
- 1/2 cup barbeque sauce
- 1/4 cup hoisin sauce
- 2 tbsp honey
- 1 tsp ground cinnamon
