Endurance Crackers

These Endurance Crackers are extremely light and crispy while providing long-lasting energy
- 1/2 cup chia seeds*
- 1/2 cup sunflower seeds
- 1/2 cup pepita seeds (or pumpkin seeds)
- 1/2 cup sesame seeds
- 1 cup water
- 1 large garlic clove, finely grated
- 1 tsp grated sweet onion
- 1/4 tsp kosher salt, or to taste
- Herbamare & kelp granules, to taste (optional)

- 2 oz brandy
- 1 oz lemon juice
- 1 oz orange liqueur

Marinated Kale Salad

- 1 large bunch organic kale (curly or lacinato)
- 1 1/2 cups cherry tomatoes
- 1/2 small red onion
- 1/2 avocado
- Sunflower seeds for topping
- {For the dressing}
- 3 Tbsp. fresh lemon juice
- 2 Tbsp. tamari (or soy sauce)
- 1 Tbsp. olive oil
RAW Vegan S'mores

- Crackers:
- raw s'mores: makes about 15
- 1 cup oats
- 1 cup buckwheat groats
- 1 cup dates
- 1 tablespoon molasses
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Marshmallows:
- 1 cup cashews
- 1/4 cup melted coconut oil
- 1/4 cup agave/maple syrup (or 1/2 cup dates)
- 1 teaspoon vanilla
- Chocolate:
- Use my raw chocolate recipe, a vegan chocolate bar, or whatever.

Homemade Salsa

Leave the lid on your Vitamix, remove the center plug of the lid, and squeeze lime juice into container
- Juice of 1 lime
- 2 large garlic cloves
- slice of jalepeno
- 1/4 medium onion
- fresh cilantro
- slice of yellow bell pepper
- Roma tomatoes, quartered
- 1-2 tbsp
Vanilla Granola - Against All Grain

Awesome as a yogurt topping or with some almond milk
- 1/2 cup raw pecans
- 1/2 cup raw hazelnuts
- 1 cup raw almonds
- 1 cup raw walnuts
- 1/4 cup raw sunflower seeds
- 1 tablespoon golden flax seeds (omit for SCD)
- 1 egg white *see note below
- 2 tablespoons coconut oil, melted
- 1 tablespoon cinnamon
- 3/4 cup honey, melted
- 1-1/2 tablespoons vanilla
- 3/4 teaspoon sea salt (plus 1 teaspoon for soaking water)
- 1/2 cup shredded coconut, unsweetened
- 1/2 cup raisins
- I no longer use the egg white in this recipe and it remains just as crunchy
Southwestern Black Bean Salad with Citrus Dressing

Make the dressing: in a small bowl, whisk together all ingredients until agave/honey is incorporated
- 15 oz. can black beans
- 8 oz. cherry tomatoes, diced
- 1 cup corn (I used frozen, thawed)
- 1 large orange bell pepper, diced
- 1/3 cup red onion, finely diced
- 3/4 cup loosely packed cilantro, stems removed
- 1 avocado
- {For the dressing}
- Juice from 1 large orange
- Juice from 1 1/2 limes
- 1/4 tsp. cumin, or more to taste
- 1/2 tsp. agave (or honey)
- 1/8 tsp. salt
- Optional: cayenne pepper or chipotle for a kick!
Michigan Cherry Chickpea Salad

In a large bowl mash the chickpeas, leaving a few whole
- 2 15 ounce canned Chickpeas
- 1/3 cup Dried Cherries
- 1/3 cup pecans, toasted and chopped
- 1/3 cup celery, diced
- 1/3 cup apple, diced small
- 1/2 cup vegan mayonnaise, I used Reduced-fat Vegenaise
- 2 tablespoons non-dairy milk
- 1/2 lemon, juiced
- 1/2 tsp salt
- 1/2 tsp pepper
Chocolate Coffee Shake

Blend on HIGH for approx. 45 to 60 seconds
- 1 Cup of Vanilla Almond Milk
- 1/2 Avacado
- 1/2 Cup of Chocolate Powder (I use Ovaltine)
- 1/4 Cup of Instant Coffee
- sweetener
- 1-2 Cups of Ice
- (add a variety of veggies for more nutrition, ....using the same vegetables I use in the chocolate veggie shake works great(see below)
