Spicy Bean Dip

In blender, combine all ingredients
- 1 15oz can of white beans (rinsed, save the liquid)
- 1 Tbsp olive oil
- 1 tsp sesame oil
- 2 tsp coconut aminos
- 2 Tbsp Tobasco sauce
- 1 clove of garlic
- 1/2 tsp Curry
- 1/4 cup of liquid from beans (add water if needed)
- 1 Tbsp Lime juice

- 1/4 cup whole sour cream, whole milk, or whole coconut milk
- 1/3 cup melted butter or coconut oil
- 1/4 cup pure maple syrup (honey would work too)
- 2 TB apple cider vinegar (don’t leave this out! It is a weird ingredient but it helps with the rise since there is no eggs, and the taste will not be there once baked – I promise!)
- 1/4 cup water
- 1/4 cup grassfed cold soluble gelatin (See tips for where to buy. This is to replace the eggs – if you can handle eggs, you can leave out the 1/4 cup water and gelatin and use 2 eggs)
- 1 cup brown rice flour or sorghum flour
- 1/2 cup white rice flour
- 1/2 cup tapioca flour
- 1 tsp aluminum free baking powder
- 1 tsp baking soda
- 1/4 tsp sea salt
- 1 TB cinnamon
- 2 cups packed shredded zucchini

In a deep large pan, add oil, heat at medium heat and spread to cover the pan
- 10-12 Cremini mushrooms, chopped(quartered)
- 2 garlic cloves chopped
- 2 big shallots chopped
- 10 Rainbow chard ( ribs cut and leaves chopped, use only soft and thin ribs. compost the thick stems :))
- 1 cup elbows or small pasta cooked
- Dried herbs( basil, thyme) 1/2 tsp or to taste
- 1/4 teaspoon black pepper
- 2/3 teaspoon salt or to taste
- 1 + cup water(reserve from the pasta or vegetable stock or plain water)
- 1 teaspoon oil

- 6 cloves garlic, crushed
- 2 small shallots, finely chopped
- 2 ounces anchovies, packed in olive oil, drained
- 2 pints grape tomatoes, halved
- Pinch of coconut palm sugar (or brown sugar)
- 1 cup chopped kalamata olives
- 2 tablespoons capers
- 2 tablespoons finely chopped parsley
- 1/2 teaspoon crushed red pepper flakes
Wild Rice Mushroom Soup

Cook rice according to package directions
- 2/3 cup dry wild rice
- 10 oz. thinly sliced mushrooms (I used crimini)
- 1 small onion
- 1 1/2 cups soy milk - unsweetened is best
- 1 1/2 cups low sodium vegetable broth
- 6 oz. garlic and herb low-fat spreadable cheese (I used Laughing Cow)
- 1 tsp. thyme
- 2 Tbsp. flour (optional, for thickening)
- Salt/pepper

- 1 1/2 cups cherry tomatoes
- 1 clove garlic
- handful each of fresh basil, cilantro, oregano
- 1/2 T cinnamon

- 1/2 cup pine nuts, toasted
- 1/2 cup extra-virgin olive oil
- 2 shallots, finely chopped
- 2 Tbsp white wine vinegar
- 1/4 cup sour cream
- 2 Tbsp finely chopped fresh tarragon
- 8 cups butter lettuce, mustard greens, and or spinach
- 1 small fennel bulb, trimmed, halved, cored, and sliced into thin wedges
- 1/2 medium cucumber, thinly sliced
- 2 medium pink grapefruit, peeled and cut into 1/4 inch think slices
- 4 oz crumbled feta cheese
- Smoked turkey breast (optional)
